Dreams on Layaway is a direct-pressed Pinot Noir rosé from Stagiaire's Summit vineyard in the Santa Cruz Mountains, planted on a sandstone and shale knoll at 1,700 to 1,800 feet with views over Monterey Bay. Winemaker Brent Mayeaux farmed the site organically with no tractors and no tilling, all work done by hand. The 2020 vintage was shaped by nearby wildfires: Mayeaux made only rosé from this vineyard that year, picking across three separate dates in a mixture of fog and smoke, with the juice rested post-press to settle out as much ash as possible before fermentation.

The grapes were pressed directly with no maceration and the juice was fermented and aged in neutral French oak puncheons. Only 75 cases were produced. The wine was bottled without fining, filtering, or added sulfites, consistent with Mayeaux's zero-zero approach across all Stagiaire releases.

The result sits closer to serious white wine in structure than to a conventional rosé. High natural acidity from the cool, high-elevation site and a longer barrel-aging period give it the kind of crystalline tension you find in a well-made blanc de noirs. Blood orange, watermelon, and a saline mineral edge are the dominant impressions, with a clean, dry finish.

The high acidity and dry mineral finish make this a strong match for raw oysters, grilled white fish with citrus, or a simple plate of burrata with sea salt. It also holds up well against dishes with briny or herbaceous elements.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Stagiaire Wine

Stagiaire Wine is the project of Brent Mayeaux, a New Orleans native who originally studied engineering before moving into wine. The name comes from his time as an apprentice — stagiaire — at wineries abroad, including work with Philippe Bornard in the Jura and Gareth Belton of Gentle Folk in the Adelaide Hills. He returned to California in 2018 and began farming his own vines in the Santa Cruz Mountains before shifting in 2021 to a négociant model focused on high-quality organic sites. He currently makes wine out of a former industrial space on Treasure Island in San Francisco Bay.

For the 2020 vintage, Mayeaux farmed the Summit Pinot vineyard himself using organic practices with no tractors, no tilling, and all vineyard work done by hand. The site sits on a sandstone and shale knoll at 1,700 to 1,800 feet above Monterey Bay. Nearby wildfires in 2020 meant he made only rosé from this vineyard that year, picking on days when air quality was manageable.

Across all his wines, Mayeaux works without added sulfites, fining agents, or filtration. For Dreams on Layaway, grapes were pressed directly with no skin contact, juice was rested to settle out wildfire ash, and the wine was fermented and aged in neutral French oak puncheons. Production was 75 cases.

Santa Cruz Mountains, United States

The Santa Cruz Mountains AVA, established in 1981, was among the first American appellations defined by elevation rather than political boundaries. It spans three counties — Santa Clara, Santa Cruz, and San Mateo — with vineyards planted between 400 and over 3,000 feet above sea level. The AVA stretches from Half Moon Bay in the north to Mount Madonna in the south. The western slopes facing the Pacific Ocean and Monterey Bay are the cooler, fog-influenced side of the range, where Pinot Noir and Chardonnay dominate. The eastern slopes facing San Francisco Bay receive more warmth and are better suited to Cabernet Sauvignon.

Soils across the AVA are thin, stony, and derived from the decomposition of underlying bedrock, which includes sandstone, shale, limestone, and granitic material depending on the site. These impoverished, well-drained soils naturally limit vine vigor and yields, which run as low as 1.5 to 2.5 tons per acre on the steepest sites. The Summit sub-district, where Stagiaire's source vineyard sits, is on the western, ocean-facing side of the range at elevations of 1,700 to 1,800 feet — above the fog line, benefiting from direct sun during the day and strong diurnal temperature swings that preserve acidity.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
