This wine pulls off something rare: it has genuine textural weight from barrel aging while staying driven by saline, citrus-tinged freshness. The co-fermentation of Chardonnay and Savagnin adds a flinty, slightly nutty quality that reads closer to the Jura than to any Australian white you might expect from the Fleurieu Peninsula.

Battered Sav is a 75% Chardonnay and 25% Savagnin blend sourced from the very sandy soils of the Mount Compass area on the Fleurieu Peninsula, South Australia. The site sits closer to the coast than its proximity to McLaren Vale might suggest, with a cooler, more maritime feel and relatively high rainfall. 2020 was a lean vintage in this corner of South Australia, but the fruit that made it to the bottle was reportedly exceptional.

Winemakers Mark Warner and Alicia Basa whole-cluster pressed the grapes, co-fermented the two varieties, and ran fermentation to nearly dry in stainless steel before moving the wine into a mix of old 225L, 300L, and 500L barrels for a rest. The wine was bottled unfined, unfiltered, and with zero added SO2. The reference point for this wine is the ouillé style of white Burgundy-adjacent wines from the Jura, specifically the work of Céline Gormally at Les Dolomies.

Borachio has been making wine in South Australia since 2016. Mark and Alicia previously worked with James Erskine at Jauma before building their own label, sourcing organic fruit from Mount Compass and Mount Torrens. Their approach is minimal-intervention without the ideology: no additives, but with a practical, problem-solving mindset in the cellar.

The salty, citrus-forward character of this wine makes it a natural match for freshly shucked oysters or other raw shellfish. It also works well with grilled whole fish, lemon-dressed salads, or a simple plate of good charcuterie and aged hard cheese. Serve well chilled, around 48-52F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Borachio

Borachio is the project of Mark Warner and Alicia Basa, based in McLaren Flat, South Australia. They began making wine in 2016, initially from a small nearby vineyard, after previously working alongside James Erskine at Jauma. The label takes its name from the Spanish word for a goatskin wine vessel, and a colloquial term for a drunkard. Their range is small-batch and sourced from organic vineyards across Mount Compass and Mount Torrens.

All fruit for Borachio wines is farmed organically. The Mount Compass vineyard, the source for the Savagnin and the Chardonnay used in Battered Sav, is a sandy-soiled coastal site that Warner notes is frequently misidentified as McLaren Vale but carries a distinctly cooler, more maritime character. Borachio does not use additives of any kind in its wines: no fining agents, no filtration, no added sulfur.

Mark Warner's winemaking approach is practical and direct. For Battered Sav, grapes are whole-cluster pressed, co-fermented in stainless steel to near dryness, then transferred to a mix of old 225L, 300L, and 500L barrels. Warner has noted a preference for even larger vessels if they were available. The stated stylistic reference is the ouillé whites of the Jura, particularly the wines of Céline Gormally at Les Dolomies: oxidative-free, barrel-aged whites with texture and mineral precision.

Wine region

Fleurieu Peninsula, Australia

The Fleurieu Peninsula sits south of Adelaide in South Australia, encompassing five distinct wine regions: McLaren Vale, Langhorne Creek, Currency Creek, Kangaroo Island, and Southern Fleurieu. The Mount Compass area, where Borachio sources its Chardonnay and Savagnin, falls within Southern Fleurieu, a cool-climate zone that gained formal Australian Geographical Indication recognition in 2001. The climate here is Mediterranean with strong maritime influence from the Southern Ocean and Gulf St Vincent, and summer temperatures run three to five degrees cooler than Adelaide.

Southern Fleurieu soils are a mix of sandy loam, ironstone, and limestone over clay subsoils. The Mount Compass site specifically is characterised by very deep glacial sand over yellow clay, which Mark Warner describes simply as 'SAND SAND SAND.' These free-draining sandy soils, combined with the site's relatively high rainfall and coastal breezes, produce grapes with vivid acidity and a distinctly saline character. While the region is better known for Pinot Noir, Chardonnay, and Cabernet Sauvignon, Borachio has demonstrated that Savagnin finds a compelling home here.
