Les Bories Jefferies

Les Bories Jefferies is a natural wine producer located in the Languedoc region of southern France, near the village of Caux. The winery was established by Englishman Jo Jefferies, who relocated to the area in 2003 to assist his father-in-law with house renovations. Inspired by local winemakers like Rémi Poujol and Bernard Bellahsen of Domaine Fontedicto, Jefferies began his winemaking journey by taking over his stepfather's Grenache Blanc vines and acquiring additional north-facing vineyards around his hometown. The estate spans approximately 10 acres of old vines planted on volcanic soils, contributing to the unique character of the wines. Jefferies employs organic farming practices, emphasizing minimal intervention to preserve the natural expression of the terroir. He utilizes traditional methods in the cellar, including whole-bunch fermentation with native yeasts and aging on fine lees. Bottling is done without fining or filtration, and no sulfites are added. Les Bories Jefferies' portfolio includes notable wines such as "La Pierre de Sisyphe," a white blend of Terret Blanc and Ugni Blanc, and "Where Black is the Color," a red blend of Grenache Gris, Grenache Noir, and Carignan. These wines have garnered attention for their purity, complexity, and true representation of the Languedoc terroir. Through his dedication to natural winemaking and respect for traditional methods, Jo Jefferies has established Les Bories Jefferies as a notable producer within the natural wine movement, offering wines that resonate with authenticity and a deep connection to their origin.
