Humus Rosé is made by Rodrigo Filipe at Quinta do Paço in Alvorninha, within the Óbidos demarcated zone of the Lisboa wine region. The blend is Touriga Nacional, Arinto, and Fernão Pires, grown on clay and limestone soils about 20 kilometers from the Atlantic. The estate sits between the ocean and the Serra dos Candeeiros mountains, giving the vineyards a cool, humid microclimate that retards ripening and preserves high natural acidity.

Winemaking is deliberately unconventional for a rosé. The Touriga Nacional macerates on its own red skins for several hours, then the juice macerates with destemmed Arinto and Fernão Pires skins for approximately 30 days — a technique closer to orange wine than to a standard saignée rosé. Spontaneous fermentation occurs in stainless steel with wild yeasts, followed by 12 months of aging in 225-liter used oak barrels.

The wine is bottled unfiltered and unfined with no added sulfites. The extended skin contact gives the wine a salmon-pink color with slight cloudiness, structure more typical of a light red than a conventional rosé, and a chewy, almost tactile mid-palate. Flavors center on rhubarb, wild strawberry, and earth, with tart acidity and a mineral finish from the limestone terroir.

Encosta da Quinta has been organically certified since 2007. Rodrigo allows grasses to grow freely between vine rows and relies on natural compost and minimal copper-sulfur applications only when necessary.

The wine's tannin and acidity make it a strong match for fatty fish like grilled salmon or tuna, where a standard rosé would feel thin. It also works well alongside charcuterie, aged goat cheese, or a vegetable tagine. Serve slightly cool, around 55-58°F, to let the earthy notes stay present without the tannins going harsh.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Encosta da Quinta

Encosta da Quinta is a family estate of 20 hectares based at Quinta do Paço in Alvorninha, a village in the Óbidos zone of the Lisboa region. The property was acquired by Rodrigo Filipe's grandfather in 1960 and previously operated as a polyculture farm. Rodrigo's father planted the first vineyard parcels during the 1990s. Rodrigo took over winemaking in the early 2000s after a career as a civil engineer; he has no formal oenology training and describes his approach as self-taught through reading and practice.

The estate farms 9 hectares of vines on red clay and limestone slopes, located approximately 20 kilometers from the Atlantic. Organic certification was obtained in 2007. Rodrigo uses natural compost and applies minimal copper and sulfur only when disease pressure requires it. Grasses grow freely between vine rows. The cool, humid microclimate keeps alcohol levels moderate, typically 11-12% ABV.

All wines are fermented with indigenous yeasts — spontaneously, without inoculation. Rodrigo adds nothing to the wines, including no sulfites at any stage. The Humus Rosé undergoes extended skin maceration with both red and white grape skins before fermenting in stainless steel tanks, then ages for 12 months in 225-liter used oak barrels. All wines are bottled unfiltered and unfined. The Humus label, launched with the first vintage in 2009, covers still rosé, red, white, and pétillant-naturel wines.

Wine region

Óbidos, Portugal

Lisboa is Portugal's most productive wine region, running along the Atlantic coast north of Lisbon and dividing into nine DOC sub-regions: Alenquer, Arruda, Torres Vedras, Bucelas, Carcavelos, Colares, Lourinhã, Óbidos, and Encostas d'Aire. Soils across the region are predominantly clay-limestone and sandy-clay. The Atlantic keeps temperatures moderate year-round, with annual rainfall of 600-1000mm falling mostly in winter, leaving summers warm and dry.

The Óbidos DOC sits in the centre-north of the Lisboa region, roughly one hour's drive north of the capital. A gap in the hills near the Peniche Peninsula channels cold, wet Atlantic westerlies directly into the appellation, creating a cool, windy climate with high summer humidity. These conditions historically favored sparkling wine production, but producers like Encosta da Quinta working organically on clay-limestone slopes have demonstrated that Touriga Nacional and the white varieties Arinto and Fernão Pires can produce still wines of real character when yields are managed carefully.
