Carbonic maceration on a white grape is genuinely unusual, and here it drives a wave of dried apricot, candied orange, and creme brulee that you don't get from conventionally fermented Grenache Blanc. The 8 months in neutral French oak adds weight without masking the aromatic intensity that makes this wine distinctive.

Say When's Weird Parties White is 100% Grenache Blanc sourced from Martian Ranch, a 102-acre Demeter certified biodynamic estate on Alisos Canyon Road in Los Alamos, Santa Barbara County. The vines are clone 141 on 101-14 rootstock, planted in 2008 under biodynamic consultant guidance. Farming follows lunar and solar calendars with no synthetic inputs.

The grapes undergo 19 days of carbonic maceration, a technique that extracts aromatic intensity while preserving freshness and low tannins. After fermentation, the wine ages for 8 months in neutral French oak, adding texture without imparting new wood character.

The result is a white wine with an unusually aromatic profile: apricot, dried mango, and orange on the nose that give way to notes of creme brulee and candied ginger spice. The carbonic maceration process amplifies the grape's natural perfume in a way that conventional white winemaking does not.

Say When is a husband-and-wife project based in Lompoc, California. Rachel DeAscentiis handles winemaking, having trained at Loring Wine Company and studied Agricultural Business at Oregon State University. Michel DeAscentiis leads design and creative direction. They produce all wines in a shared winery facility in Lompoc from organically and biodynamically farmed Central Coast vineyards.

The wine's richness and aromatic sweetness work well with dishes that have some fat and spice: roast pork with stone fruit, Thai green curry, or aged Gouda. It also holds its own alongside spiced North African dishes like chicken tagine with apricots.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Say When

Say When was launched in 2016 by Rachel (Silkowski) DeAscentiis and Michel DeAscentiis, based out of Lompoc, California. Rachel began interning at Loring Wine Company at age 18 while completing her Agricultural Business degree at Oregon State University, eventually becoming Assistant Winemaker there. She produced her first personal barrel of Pinot Noir in 2013 under the RASI label before scaling into Say When with Michel.

Say When sources grapes exclusively from small, organically, biodynamically, and sustainably farmed vineyards across California's Central Coast, including Santa Barbara and Paso Robles. All wines are produced in a shared winery space in Lompoc, with Rachel handling the physical winemaking and Michel directing branding and creative work.

The Weird Parties label is Say When's experimental line, built around semi-carbonic and carbonic maceration techniques applied to varieties sourced from Demeter certified vineyards, including Martian Ranch in Alisos Canyon. The 2019 Weird Parties White uses 19 days of carbonic maceration on 100% Grenache Blanc, followed by 8 months aging in neutral French oak.

Alisos Canyon AVA is Santa Barbara County's seventh and newest appellation, established in August 2020. It runs east-west along Alisos Canyon Road approximately three miles south of Los Alamos off Highway 101, covering 5,774 acres with around 238 planted acres across nine commercial vineyards. The AVA sits between the Santa Maria Valley to the north and the Santa Ynez Valley to the south, roughly 25 miles from the Pacific Ocean.

The appellation's dominant soils are derived from weathered sandstone and shale, primarily the Paso Robles Formation (63% of soils) and Careaga Sandstone (13%). High sand content improves drainage and discourages nematodes and phylloxera, while calcium-rich shale pebbles thicken grape skins. The climate is warmer than the marine-influenced Santa Maria Valley but cooler than inland areas to the east, a balance petitioners called the 'Goldilocks Rhone Zone,' ideal for Syrah, Grenache, Mourvedre, and Grenache Blanc.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
