No Added Sulfites

No-added-sulfite wines, often called zero-zero, are made with no sulfur dioxide added at any stage. They are the most uncompromising end of natural wine, relying on healthy fruit and careful cellar work to stay stable.

Zero-zero means nothing added and nothing taken away, including no sulfur. It is worth being precise: no-added-sulfite is not the same as sulfite-free, because fermentation always produces a trace of sulfur on its own, usually under 10 mg/L. What sets these wines apart is that the winemaker contributes none of the sulfur that nearly every other bottle relies on for protection.

Making wine this way leaves no margin for error. It demands pristine organic or biodynamic fruit, scrupulous cellar hygiene, cool and steady temperatures, and often a protective veil of carbon dioxide. Most are bottled unfined and unfiltered. This is the most fragile category in wine, which is exactly why the growers who do it well are worth seeking out.

Treat these bottles with a little care and they reward you with extraordinary purity and vivid, living fruit. Keep them cold, ideally from a seller who ships cold, and drink them on the younger side. Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.

Zero-zero is shorthand for wine made with nothing added and nothing removed, including no added sulfites. It is the strictest interpretation of natural winemaking, where the wine is shaped entirely by the fruit, the fermentation, and the winemaker's care rather than by additives.

No. Fermentation naturally produces a small amount of sulfur, usually under 10 mg/L, so no wine is ever truly sulfite-free. No-added-sulfite simply means the winemaker did not add any, which is why these bottles still carry a contains sulfites note in many markets.

It comes down to whether sulfur was added. No-added-sulfite wines have none beyond the trace fermentation creates, while low-sulfite wines have a small amount added, usually at bottling. Low-sulfite bottles are a little more stable and forgiving as a result.

Sulfur normally protects wine from heat and oxygen, so without it these wines are more sensitive. Keeping them cold, ideally with cold-chain shipping, slows oxidation and keeps them stable and fresh. Warm storage is the quickest way to push them out of balance.

They often do. Many feel especially vivid and alive, sometimes with a light spritz or a touch of funk, and they can vary more from bottle to bottle. Serving them slightly chilled keeps them fresh and shows the purity at their best.

Almost always. Making a stable wine without added sulfur depends on flawless fruit, so these wines start from organic or biodynamic vineyards as a matter of course. Clean farming is effectively a prerequisite for the zero-zero approach.
