Trebbiozzo is one of the more honest pet nats we carry: bone dry, saline, and built around Trebbiano's naturally high acidity rather than residual sweetness or heavy yeast character. The green apple and white peach notes stay crisp all the way through, and the light mineral texture on the finish makes it genuinely refreshing rather than just fizzy.

Trebbiozzo is 100% Trebbiano Toscano grown on the clay and stone hillsides of Pianello, a small hamlet north-east of Perugia at around 300 meters elevation. The farm belongs to Giovanni Battista Mesina, a third-generation Sardinian shepherd whose family relocated to central Umbria in the 1960s. The vineyards share the hillside with olive trees and sheep pasture, farmed without synthetic inputs.

The wine is made by méthode ancestrale: grapes ferment spontaneously in an open-top resin tank, then the partially fermented wine rests in fiberglass through the winter. In February it is bottled with a dose of frozen must from the same harvest, triggering a natural secondary fermentation in the bottle. The wine is never fined, never filtered, and no sulfites are added at any stage.

The result is a lightly cloudy, gently fizzy white with brisk acidity and very low residual sugar. Trebbiano's natural character comes through cleanly: green apple, lemon peel, white peach, and a saline mineral thread that runs through the palate. The bubbles are soft rather than aggressive, more prickle than pressure.

Classified as Umbria IGT. Suitable for vegans.

Works well alongside light antipasti, fresh cheeses like ricotta or mozzarella, and simple seafood dishes such as grilled squid or raw oysters. The wine's salinity and acidity also cut through the fat in fried foods, making it a reliable match for fritto misto or vegetable fritti.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Giovanni Mesina

Giovanni Battista Mesina calls himself 'the shepherd who makes wine,' and the description is accurate. His family left Sardinia's Barbagia mountains in the 1960s and settled in Pianello, a hilltop hamlet north-east of Perugia. Raising sheep has always been the family's primary work: the homestead supports over 1,000 head, producing milk, cheese, and wool. The farm covers more than 140 hectares in total, with vineyards occupying the steepest ground, olive trees on the hardest-to-irrigate slopes, and the gentler terrain reserved for sheep pasture.

At the time of his first bottled vintage in 2017, Giovanni farmed roughly 3 hectares of vines, planted to Sangiovese, Ciliegiolo, Montepulciano, Vernaccia Rossa, Trebbiano, and Vermentino. The Vermentino reflects his Sardinian roots directly. The vineyard sits at approximately 300 meters above sea level on clay and stony soils. Farming is done without synthetic inputs, described by RAW WINE as organic and biodynamic in practice, though uncertified. The wines are produced without commercial yeasts, fining agents, filtration, or added sulfites.

Winemaking is done in the family's old animal stall. For Trebbiozzo, grapes undergo spontaneous fermentation in an open-top resin tank before the wine rests through winter in fiberglass. In February, the wine is bottled using the méthode ancestrale: a portion of frozen must from the same harvest is added to each bottle to restart fermentation naturally in the sealed vessel. The resulting bubbles are gentle, residual sugar is below 1 g/L, and sulfite levels stay under 10 mg/L.

Umbria, Italy

Umbria sits at the geographic center of the Italian peninsula, bordered by Tuscany to the west, Marche to the east, and Lazio to the southwest. It is the only Italian region with no coastline and no international border. The landscape is predominantly hilly, with vineyards planted on terraced slopes across a varied mix of clay, sand, and limestone soils. The continental climate delivers cold, wet winters and hot, dry summers, with significant day-to-night temperature swings at higher elevations. These thermal shifts slow ripening and help white varieties retain acidity and aromatic freshness.

Umbria holds two DOCGs: Montefalco Sagrantino, made exclusively from the Sagrantino grape, and Torgiano Rosso Riserva, based on Sangiovese. The region's 13 DOCs include Orvieto, historically Umbria's most recognized white wine zone, where Trebbiano Toscano (called Procanico locally) and Grechetto are the dominant grapes. Trebbiano accounts for roughly 17% of all vines planted in Umbria and appears in at least 10 DOC designations. Producers working outside the established appellations, as Giovanni Mesina does, bottle under the broader Umbria IGT classification.

Carrier will try to delivery a package up to three times before returning the package to us.
