Stagiaire Wine Dust in the Tides 2023 is a Pinot Noir from an extreme coastal site in California's Fort Ross-Seaview appellation. The three-acre vineyard sits at 1,400 feet elevation, just over a mile from the Pacific Ocean, on the first ridge of the Sonoma Coast. Stagiaire Wine Dust in the Tides 2023 was picked late in the season at perfect ripeness, then 100% destemmed and left on skins for 30 days. Aging took place in barrels and puncheons for one year. The result is dense, dark-fruited, and confidently coastal California Pinot Noir.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Stagiaire Wine

Stagiaire Wine is the project of Brent Mayeaux, a New Orleans native who transitioned from engineering to winemaking. The name—French for "apprentice"—comes from his time training at wineries around the world and reflects a philosophy of continuous learning and humility in the craft.

Mayeaux's first cellar job came in 2015 at Flowers Winery on the Sonoma Coast, a prestigious biodynamic estate known for classically styled Pinot Noir and Chardonnay. The experience surrounded him with talented individuals who would become supporters of Stagiaire in later years. Subsequent harvests in Australia's Adelaide Hills with Gareth Belton of Gentle Folk and in France's Jura with Philippe Bornard turned his attention definitively toward natural wine.

Returning to California in 2018, Mayeaux initially attempted to manage his own vineyards—standard practice in France but nearly impossible for young, non-legacy winemakers in California given land costs. After years of logistical challenges and long drives between scattered vineyard sites, he shifted in 2021 to focus on sourcing fruit from high-quality parcels farmed by trusted growers. This négociant approach allows more care and time in the cellar, where he now works from a former industrial space on Treasure Island in San Francisco Bay.

The Dust in the Tides vineyard represents a full-circle moment: located near where Mayeaux worked his first harvest, the three-acre site fell into his hands almost a decade after those formative Flowers days. He co-farms these vines with Joe Ryan, another Flowers alumnus now making wine for Ernest Wines.

All Stagiaire wines are "zero-zero"—made without added sulfites or other interventions. Mayeaux sources from organically and regeneratively farmed vineyards along the California coast, from Santa Cruz to Sonoma, seeking growers who work with nature rather than against it.

The Sonoma Coast AVA stretches along California's Pacific shoreline, where cold ocean waters and coastal fog create some of the state's most challenging—and rewarding—conditions for Pinot Noir and Chardonnay. Within this broad appellation, the Fort Ross-Seaview sub-AVA represents the extreme edge: vineyards planted above the fog line at elevations between 920 and 1,800 feet, often within sight and sound of the ocean.

This particular vineyard sits at 1,400 feet elevation, just over a mile from the Pacific, on the first ridge facing the sea. The proximity to cold water creates dramatic diurnal temperature swings—warm sunny days followed by rapidly cooling evenings as marine air floods in. Vines here experience intense coastal wind, persistent fog influence, and growing conditions more commonly associated with marginal European regions than California.

The resulting wines differ markedly from warmer California Pinot Noir. Grapes ripen slowly over extended hang time, developing flavor complexity while retaining natural acidity. The combination of elevation, maritime influence, and rocky soils produces wines with tension and minerality alongside ripe fruit—a balance that has made Fort Ross-Seaview among the most sought-after sources for serious California Pinot Noir.

Flowers Vineyard & Winery pioneered viticulture here in the 1990s, proving that world-class Pinot Noir could grow in conditions many considered too extreme. A generation of winemakers who trained at Flowers has since spread across the region, applying lessons learned on these steep coastal ridges to their own projects. The site farmed by Stagiaire represents this legacy: discovered through connections made during winemaker Brent Mayeaux's first harvest job at Flowers, now co-farmed with fellow Flowers alumnus Joe Ryan of Ernest Wines.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.

1) Reship the package right away: due to the very high cost of shipping and returns, we must charge a re-shipping fee to be determined based on package size and shipping destination.
