Maria Duck is a pétillant naturel made from 100% Fernão Pires (called Maria Gomes locally in Bairrada) sourced from 20-year-old vines on a 0.2-hectare plot of sandy soils in the Amoreira da Gândara vineyard. Grapes are hand-harvested in mid-August, vineyard sorted, and undergo a five-day maceration before being pressed into stainless steel for spontaneous fermentation with ambient yeasts.

The wine is bottled before primary fermentation finishes, capturing natural carbonation through the ancestral method. It is unfined, unfiltered, and released without disgorgement, which means it arrives hazy and with some lees sediment — that is not a flaw, it is the point. ABV clocks in just above 10%.

On the nose and palate: lemon curd, grapefruit pith, ripe mango, and papaya, with white pepper spice and a chalky, saline finish. Low alcohol, high energy, and genuinely refreshing. Drink it cold and soon after purchase.

Serve ice cold alongside fresh seafood: raw oysters, grilled sardines, or a simple plate of salted cod fritters. The chalky salinity and citrus notes also cut through fried foods well. Works as a low-alcohol aperitif on its own before any meal.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Duckman

The Duckman project is the work of Maria Pato, daughter of the well-known Bairrada producer Luís Pato and granddaughter of João Pato (1920–1986), after whom the winery is named. Luís Pato spent decades championing indigenous Bairrada varieties, particularly Baga, and is widely credited with bringing international attention to the region. Maria launched her own project — named after her grandfather and branded around duck imagery, pato being the Portuguese word for duck — to work with the same indigenous varieties under a minimal-intervention philosophy.

Luís and Maria Pato farm two main vineyards: Amoreira da Gândara, composed primarily of sandy soils, and Óis do Bairro, composed of chalky-clay soils. Both sites grow Baga, Bical, Cercial, and Fernão Pires. Farming is conducted sustainably. The labels carry no regional indication intentionally, to let the grape variety and terroir speak through minimal cellar intervention rather than appellation identity.

For Maria Duck Pet-Nat, the Fernão Pires grapes are vineyard sorted and hand-harvested in mid-August from 20-year-old vines on the 0.2-hectare Amoreira da Gândara plot. After a five-day maceration in stainless steel, fermentation begins spontaneously with ambient yeasts. The wine is bottled before fermentation completes, allowing carbonation to develop naturally in the bottle — the ancestral or pétillant naturel method. The finished wine is unfined, unfiltered, and not disgorged.

Wine region

Bairrada, Portugal

Bairrada is a DOC located in the coastal western half of the Beiras region in central-northern Portugal, situated between Oporto to the north and Coimbra to the south. The Vouga River marks its northern boundary and the Mondego River its southern edge, while the Serra do Caramulo and Serra do Buçaco mountains define its eastern limit and the Atlantic Ocean lies to the west. The region is relatively flat, with vineyards rarely exceeding 120 meters in altitude.

The Atlantic proximity gives Bairrada a mild, maritime climate with abundant rainfall and significant diurnal temperature variation during the ripening period — sometimes reaching 20°C between day and night temperatures — which preserves natural acidity in the grapes. Soils are predominantly clay and limestone-clay, though sandy soils also exist, as in the Amoreira da Gândara site. The DOC for red and white wines was established in 1979 and for sparkling wine in 1991. Key white grapes are Fernão Pires (locally called Maria Gomes) and Bical; the dominant red variety is Baga. Wines that fall outside strict DOC rules — including many natural and pet-nat productions — are labeled under the IGP Beira Atlântico.
