Tasting notes

Freisa is one of the rarest grapes in California, and carbonic maceration pulls out its most electric side: vivid strawberry and raspberry aromas, snappy acidity, and a purple-tinged fizz that drinks more like juice than wine. The no-sulfur, no-disgorgement approach keeps it raw and alive in the glass.

Enzo is 100% Freisa sourced from Siletto Family Vineyard in Tres Pinos, San Benito County AVA. The vineyard spans 125 acres of gravelly loam soils along Tres Pinos Creek, with organically farmed vines ranging from 30 to 50 years old. Freisa is a Piedmontese red grape with a parent-offspring relationship with Nebbiolo, and at the time of production there were only two plantings of it in California.

Whole clusters underwent two weeks of carbonic maceration before being pressed to tank and fermented dry with native yeast and bacteria. The wine was racked off primary lees early to preserve viable microflora for bottle refermentation. A small amount of frozen Freisa juice reserved from pressing was added before bottling under crown cap. No fining, filtration, sulfur addition, or disgorgement.

The result is a lightly effervescent sparkling red with a purple-ruby hue. Freisa's characteristic high acidity and red-fruit aromatics — strawberry, raspberry, violet, and a streak of pomegranate — come through cleanly, while the carbonic maceration softens the grape's naturally grippy tannins and keeps the wine bright and juicy. Serve well-chilled and drink young.

The high acidity and light body make this a natural with cured meats, salumi boards, and fresh cheeses. It also works well alongside pizza, tomato-based pastas, and grilled sausages. Serve well-chilled straight through the meal.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Wonderwerk Co.

Wonderwerk Co. is a Los Angeles-based natural wine label founded by childhood friends Issamu Kamide and Andrew Lardy, who met in high school in Virginia before relocating to California. Andrew enrolled in the Fresno State Enology program after abandoning a graduate degree in neuropsychology, then gained production experience at multiple wineries on California's Central Coast. Issamu pursued brand management and earned a WSET Level 3 certification while working in consumer packaged goods in Los Angeles. The label's name comes from Wonderwerk Cave in South Africa, believed to hold the earliest evidence of human cooking.

Wonderwerk produces wine at the Atelier des Savants Fous custom crush facility in Gilroy, California. They source grapes from organically farmed vineyards across the state, with sustainable farming as a minimum requirement for any fruit they purchase. Their winemaking approach includes carbonic maceration, co-fermentation, piquette production, and botanical infusions, always without fining or filtration. Enzo is among their most focused single-varietal expressions, built entirely around one of California's rarest Italian red grapes.

Wine region

California, United States

San Benito County sits inland from Monterey Bay in central California, roughly 30 miles from the Pacific. The region's vineyards are spread across the San Benito, Paicines, and Cienega Valley AVAs, with most sites planted in gravelly loam soils along the San Benito River and Tres Pinos Creek. The proximity of the San Andreas Fault influences soil composition, and afternoon winds from the coast help regulate temperatures and preserve natural acidity in the fruit.

San Benito County hosted some of California's earliest commercial vineyards, many planted for the large-scale Almaden Winery operation. After Almaden's sale in 1986, smaller growers like the Siletto family retained diverse plantings of European varieties, including rare Italian, French, and Iberian grapes. Today, producers across California source from San Benito for unusual varieties that are nearly impossible to find elsewhere in the state.
