Unified Ferments Wen Shan Bao Zhong is a non-alcoholic fermented tea beverage produced in Brooklyn, New York, made from Wen Shan Bao Zhong oolong tea sourced from a fourth-generation tea-producing family in Taiwan's Nantou region. The tea is a lightly oxidized bright oolong, known for its floral character, oat sweetness, and subtle salinity. Unified Ferments steeps and ferments the tea using a kombucha-style process with filtered sparkling water, sugar, and a kombucha starter culture. The result is a sparkling, non-alcoholic drink positioned as a sophisticated table alternative to white wine.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Unified Ferments

Unified Ferments is a Brooklyn, New York-based producer of non-alcoholic fermented tea beverages. The company was founded around the idea that the two oldest fermentation traditions, wine-style fermentation and tea production, share more than most people realize: both depend on terroir, on the quality of raw material, and on careful process to produce something worth drinking slowly and paying attention to. The Unified Ferments team makes the case that their products belong at the same table as wine, not as a concession to sobriety, but because they offer genuine complexity in their own right.

The production approach is deliberately close to how the natural wine world talks about wine. Unified Ferments sources single-origin teas from specific producers in specific regions, treating the tea itself as the equivalent of a vineyard site. The tea matters, in their words, and unlike most commercial kombucha, which uses any available base tea and relies on the fermentation culture to do most of the flavor work, Unified Ferments inverts that priority. The tea's intrinsic character drives the final product; the fermentation process is there to develop and extend it, not to mask it.

Fermentation takes place in small batches in Brooklyn, with strict temperature monitoring and regular tasting to track the development of acidity, aromatic volatiles, and structure. Some cuvées undergo secondary bottle fermentation in the pét-nat style, adding fine bubbles naturally without force carbonation. The Wen Shan Bao Zhong is naturally sparkling, with the bubbles coming from controlled carbonation post-fermentation. Alcohol content is below 0.5%, technically non-alcoholic by US standards.

Unified Ferments bottles are found on the menus of Eleven Madison Park and Four Horsemen in New York, two of the city's most respected restaurants in the natural wine and fine dining space. The fact that these venues carry the product alongside serious wine lists says something about how seriously the hospitality world is beginning to treat non-alcoholic fermented beverages.

Wen Shan Bao Zhong is one of Taiwan's most historically significant teas, produced in the Wen Shan area of New Taipei City, in the northern part of the island. The name translates loosely as "wrapped kind" or "paper-wrapped," a reference to the traditional practice of wrapping the finished tea leaves in paper packets during drying. The tea style belongs to the oolong family, sitting at the lightest end of the oxidation spectrum, typically oxidized between 8% and 18%, making it considerably closer in character to a green tea than to a heavily oxidized oolong like Da Hong Pao.

The Wen Shan region, including the districts of Pinglin and Shiding in New Taipei City, is the primary production area for Bao Zhong, with vineyards of parallel tea gardens planted across fog-draped hillsides at elevations between approximately 820 and 2,600 ft above sea level. The cool temperatures, consistent rainfall, and high humidity typical of northern Taiwan's mountain districts slow the growth of the tea plant and concentrate the aromatic compounds that define the Bao Zhong style. Qingxin Oolong is the dominant cultivar used for Wen Shan Bao Zhong, a variety prized for its naturally high floral character, including the orchid and gardenia notes that experienced tasters associate with the best examples of the tea.

The Nantou region, from which Unified Ferments sources its tea through a fourth-generation producing family, is Taiwan's primary inland tea-growing county and home to some of the island's most celebrated high-altitude teas, including the famous Li Shan and Alishan oolongs. While Nantou is best known for its heavily oxidized and roasted styles, skilled producers in the region also produce Bao Zhong-style teas that reflect the mountain climate in their clean, mineral finish and elevated floral expression. The combination of traditional family farming knowledge and high-altitude growing conditions contributes directly to the particular character of the tea that Unified Ferments has chosen for this ferment.
