Umami-heavy and teriyaki-adjacent, and the reason it tastes different from everything near it on the shelf is that it is cold-filled rather than pasteurised and thinned. Justin Gill went through 49 formulations to get a shelf-stable version that still tasted like his grandmother's.
Bachan means grandmother. Hers was Judy Yokoyama, and the sauce was a holiday ritual in Sebastopol long before it was a product.
17 oz squeeze bottle.
It is a finishing and glazing sauce more than a marinade, though it does both.
Brushed onto chicken, pork or salmon in the last minutes
Stirred through fried rice off the heat
As a dipping sauce, straight
Over grilled vegetables
On a burger, in place of everything else

The Brand
Bachan's
Bachan is grandmother. Judy Yokoyama was born in Sebastopol, California in 1936 and spent her life there, apart from two years her family was displaced to a Japanese internment camp, where meals together were part of what held them together.
Her sauce became a family ritual. Every holiday Justin Gill's family would cook a big batch in a kettle, hand-bottle it and give it to clients of the family landscaping business. Every January people turned up at the office with the empty bottles, wanting more, or the recipe.
Turning that into a product took six years. Co-packers told Justin to pasteurise it and water it down to hit a price, and doing so wrecked it, so he worked out the formulation himself: 49 attempts before he had a cold-filled version that was shelf stable and still tasted like the kettle. It launched in 2019 and is now the best-selling barbecue sauce on Amazon.
Pantry FAQs
Will this ship with my wine?
No, pantry items travel separately.
Pantry items are fulfilled by our partner retailer in California, so they ship on their own and will not arrive in the same box as your wine. Order both and you should expect two parcels, often on different days.
You will receive tracking for the pantry parcel within 3-4 business days.
Do I need to sign for the delivery?
No. Unlike wine, food does not need a signature.
Wine requires an adult signature on delivery. Pantry items do not, so they can be left at your door like any ordinary parcel.
Can I order pantry items on their own, without wine?
Yes, a pantry order stands on its own.
Yes. Nothing here is tied to a wine purchase. Shipping for pantry items is calculated separately at checkout.
How should I store it?
Check the label first.
Most of what we carry is shelf stable until it is opened, and would rather sit in a cool dark cupboard than on a sunny counter. Anything that needs refrigerating once opened says so on the label.
Something arrived damaged or wrong. What now?
Get in touch and we will sort it out.
Email us with your order number and a photo of the problem and we will make it right.
Why does a natural wine shop sell pantry items?
Because the bottle is rarely the whole evening.
These are things we actually cook with, picked by the same people who pick the wine. A good bottle tends to want something on the table next to it, and this is the shortlist we would hand a friend who asked.
