La Dernière Goutte Tisane de Bois Tordu is a natural red wine produced by Cyrille Vuillod in the Beaujolais region of France under his La Dernière Goutte label. This wine is made from 100% Gamay grapes, grown organically on soils rich in pink granite, sand, clay, and silex. The wine undergoes carbonic maceration for about nine days, enhancing its fruity and vibrant character. After fermentation, it is aged six months in old oak barrels to bring out complexity and texture.

The 2023 vintage of Tisane de Bois Tordu offers a lively and fresh profile, with aromas of red berries, notably cherry, and a touch of minerality from the terroir. This wine is bottled unfined and unfiltered, with no added sulfites, making it a true expression of natural winemaking. Pair with various foods, from light appetizers to grilled meats.

Cyrille Vuillod is the winemaker behind La Dernière Goutte, a natural wine project based in Beaujolais, France. Originally from the Hautes-Alpes, Cyrille had an unconventional start, working as a ski instructor before turning to winemaking in 2011. After learning the trade under the mentorship of Jean-Claude Lapalu, he launched his label in 2012.

Cyrille primarily cultivates Gamay on the outskirts of Brouilly, farming organically on a small 5-hectare vineyard with soils rich in pink granite, clay, and sand. His winemaking style emphasizes minimal intervention, using carbonic maceration for soft, fruit-forward wines and avoiding the use of added sulfites whenever possible. He is known for his use of amphora and concrete eggs, which add texture and complexity to his wines.

La Dernière Goutte has become a standout in the natural wine scene. Cyrille's wines are praised for their drinkability, freshness, and authentic expression of Beaujolais terroir.

The Beaujolais wine region, located in the eastern part of France, is an integral part of the Burgundy wine area but maintains a distinct identity due to its unique wine production methods and grape varieties. It stretches from the southern tip of Burgundy to the northern parts of Lyon, encompassing about 55 kilometers from north to south and 25 kilometers from east to west.

Beaujolais is primarily known for its use of the Gamay grape, which is relatively easy to cultivate and ripens early. The region's soils are diverse, with granite predominating in the northern areas and sedimentary rock in the south. This geological variance significantly influences the flavor profile and structure of the wines produced here.

The region is famous for Beaujolais Nouveau, a young wine released annually on the third Thursday of November. This tradition celebrates the end of the harvest. It involves the wine made with carbonic maceration, emphasizing fresh, fruity flavors without extracting bitter tannins from the grape skins.

Apart from Beaujolais Nouveau, the region also produces more structured and complex wines, particularly from the ten Crus of Beaujolais, named areas recognized for higher quality. These crus include Brouilly, Morgon, and Moulin-à-Vent, among others. Wines from these areas are capable of aging and evolving complexity over several years.

Beaujolais wine production is divided into three classifications: Beaujolais AOC, for wines typically light and fruity, suitable for immediate consumption; Beaujolais-Villages AOC, coming from 38 designated municipalities and offering slightly higher complexity; and the aforementioned Cru Beaujolais, from the ten specific areas known for their distinctive and more robust wines.

The Beaujolais region produces approximately 70 million liters annually, accounting for nearly half of all Gamay-based wines globally. Wine growing and production here rely heavily on traditional knowledge and practices, with many growers adhering to natural wine production methods. These practices emphasize minimal intervention in the vineyard and winery to preserve the natural expression of the grape and terroir.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
