Le Rose does something unusual with Malvasia di Candia Aromatica: short skin contact and free-run-only collection give it floral aromatic lift without grip, while bottle fermentation adds a faint bread crust note that grounds the white peach and orange blossom. At 10.5% ABV with no added sulfur, it stays vivid and precise all the way to the last sip.

Le Rose is 100% Malvasia di Candia Aromatica grown at 150 to 230 meters elevation in the Crostolo river valley near Quattro Castella, Reggio Emilia. The vineyards sit on gravelly soils with significant silt, sandstone, and gypsum formations. Grapes are harvested early by hand to preserve aromatic intensity and natural acidity.

After harvest, the grapes undergo a short skin maceration. Only free-run juice is collected — the skins are never pressed — which keeps tannin low despite skin contact. Chilled must from the same harvest is blended into the base wine before bottling, initiating a natural secondary fermentation in bottle that completes over approximately three months. The wine is never disgorged, never dosed, and no sulfur is added at any stage.

Le Rose is bottled with natural sediment and pours with a light golden hue and a soft, persistent bead. On the nose: orange blossom, white peach, and a thread of bread crust from the bottle fermentation. The palate is fresh and lightly textured, finishing with a clean mineral salinity. Alcohol sits at 10.5%, keeping the wine light on its feet.

The wine is classified as Emilia Bianco IGT. Ca' de Noci has held certified organic status since 1993, and all wines are produced without added sulfur, fining agents, or filtration.

Le Rose works well alongside light antipasti — prosciutto di Parma, soft fresh cheeses, or marinated white anchovies. Its aromatic profile and saline finish also make it a natural partner for lightly dressed raw seafood, sushi, or a simple grain salad with citrus. Serve well chilled, between 42 and 46 degrees Fahrenheit, and pour gently to preserve the natural carbonation.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Ca' de Noci

Ca' de Noci — House of Walnuts in the local dialect — is a family estate located roughly 25 kilometers south of Reggio Emilia in the Vendina area of Quattro Castella. The first vineyards were planted in 1970 by Vittorio Masini, a professor of agriculture who selected rare native varieties including Spergola, Malbo Gentile, and Lambrusco Montericco at a time when most growers in the region were replacing such varieties with higher-yield commercial options. Malvasia and Moscato vines were added between 1970 and 1976.

In 1993, Vittorio's sons Giovanni, an agronomist and enologist, and Alberto, an architect with a focus on viticulture, took over direct management of the estate and converted fully to certified organic farming. The estate has held organic certification continuously since that year. The five hectares of vineyards run along the Crostolo river valley on stony, silty hillsides. No herbicides, pesticides, synthetic fertilizers, or irrigation are used. Treatments are limited to minimal copper and sulfate applications and preparations from plant and animal sources.

All fermentations at Ca' de Noci are spontaneous, using indigenous yeasts cultivated each year from the first ripe bunches of the harvest. No sulfur dioxide is added to any wine at any stage. All wines are bottled unfiltered and unfined. For the sparkling wines, natural secondary fermentation occurs in bottle using chilled must from the same harvest as the trigger; there is no disgorgement and no dosage. Le Rose was first produced in 2014 from an early harvest of Malvasia Aromatica and has been made each vintage since.

Emilia-Romagna stretches across northern Italy from the Po Valley plains to the Apennine foothills, covering roughly 53,500 hectares of vineyards. The region divides into two distinct wine cultures: the western Emilia section, centered on Reggio Emilia, Modena, and Parma, where sparkling frizzante wines dominate, and the eastern Romagna section, where still Sangiovese and Albana are the focus. Ca' de Noci sits in the Emilia half, in the hills south of Reggio Emilia where the Apennines begin to rise from the valley floor. Vineyards here sit at 150 to 230 meters on soils of gravel, silt, sandstone, and gypsum — a stark contrast to the flat, fertile alluvial plains below.

The Emilia IGT is the relevant appellation for Ca' de Noci's wines, covering the provinces of Reggio Emilia, Modena, Parma, Piacenza, and Ferrara. Malvasia di Candia Aromatica is one of the key white varieties of the Emilia zone, producing intensely aromatic wines with floral and stone fruit character. The ancestral tradition of bottle-fermented frizzante wines runs deep in this part of the region — historically, grapes were fermented in cold autumn cellars and bottled quickly to retain natural carbonation, a technique that producers like Ca' de Noci now apply with precision and without additives.
