This is a textbook illustration of what Riesling can do in a pét-nat format: the grape's intrinsic acidity keeps the wine bright and focused, while the granite soils of Saint-Hippolyte push through as a saline, stony edge beneath the stone fruit. At 11% ABV with gentle, round bubbles and zero additions of any kind, it is one of the most effortlessly drinkable expressions in the Pirouettes lineup.

La Bullette de David is a pét-nat (pétillant naturel) made from 100% Riesling grown by David Koeberle at Domaine Muller-Koeberle in Saint-Hippolyte, Alsace. The estate sits on granite soils at the foot of the Haut-Koenigsbourg, and David farms 27 hectares organically and biodynamically under both Ecocert/Demeter certification and the Vin Méthode Nature label.

The grapes are hand-harvested and direct-pressed, then fermented in stainless steel tanks with indigenous yeast and zero sulfur additions. Before fermentation finishes, the wine is transferred to bottle to complete its single fermentation naturally — the ancestral method that generates gentle, round bubbles without any added sugar, yeast, or sulfur. The wine is unfiltered and left undisgorged, so expect a slight haze and fine sediment.

On the palate it delivers nectarine, apricot, honey-crisp apple, and pear alongside a savory undercurrent reminiscent of mustard seed. At 11% ABV the fizz is delicate rather than aggressive, making it a go-to aperitif or a low-intervention counterpart to the more structured sparkling wines of Alsace.

La Bullette de David is one cuvée within Les Vins Pirouettes, a collective founded in 2008 by Christian Binner of Ammerschwihr. The project pairs Binner's two decades of zero-zero winemaking experience with the grapes of independent organic and biodynamic growers across Alsace — David's name on the label identifies him as the grower and vinifier behind this bottling.

The wine's low alcohol, bright acidity, and savory undercurrent make it a natural match for spicy Thai or Vietnamese food, where the stone fruit rounds out heat. It also works well alongside a charcuterie board with saucisson, Comté, or Manchego. Serve well-chilled as an aperitif or alongside fresh oysters or river trout.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Les Vins Pirouettes

Les Vins Pirouettes is a collective project founded in 2008 by Christian Binner, who has made zero-zero wines at his domaine in Ammerschwihr for more than 20 years. Concerned that organic and biodynamic growers were selling high-quality fruit to cooperatives for low prices, Binner created the project to help those growers make and bottle wine under their own names. Each cuvée is vinified at the individual grower's own cellar — not a négociant arrangement — with guidance from project enologists Xavier Couturier and Pierre Sanchez. The grower's first name always appears on the label.

La Bullette de David is cultivated and vinified by David Koeberle at Domaine Muller-Koeberle in Saint-Hippolyte. The estate was founded in 1961 by Eugène Muller and covers 27 hectares on granite soils. David, the fourth generation to run the estate, began transitioning to organic farming in 2012 and subsequently achieved Ecocert, Demeter, and Vin Méthode Nature certification. His farming practice incorporates agroforestry principles, with trees and hedges planted throughout the vineyards to support biodiversity and soil health.

In the cellar, David Koeberle uses no additives or sulfur at any stage, relying entirely on indigenous yeasts. For La Bullette de David, grapes are hand-harvested and direct-pressed, then fermented in stainless steel tanks before being transferred to bottle to finish fermentation naturally via the méthode ancestrale. The wine is unfiltered and not disgorged, leaving natural sediment in the bottle.

Alsace, France

Alsace runs as a narrow strip of northeastern France between the Vosges Mountains and the Rhine River, stretching roughly 170 kilometers from Marlenheim south to Thann. The Vosges create a pronounced rain shadow that makes Alsace one of the driest wine regions in France, with annual rainfall between 500 and 650 millimeters and a semi-continental climate of cold winters, warm summers, and long dry autumns. Saint-Hippolyte, where Domaine Muller-Koeberle is based, sits in the Haut-Rhin department on granite soils that give wines a distinctive mineral sharpness and saline finish.

Alsace's geological patchwork spans granite, schist, limestone, marl, sandstone, and volcanic matter — a diversity that allows each village and lieu-dit to produce wines of distinct character. Riesling, Gewurztraminer, Pinot Gris, and Muscat are the four noble varieties permitted in Alsace's 51 Grand Cru sites. More than 36% of Alsace vineyards are now certified organic, reflecting the region's suitability for low-intervention farming: the Vosges rain shadow reduces fungal pressure, allowing growers to work without systemic treatments.

Carrier will try to delivery a package up to three times before returning the package to us.
