Joan Rubió Ull de Llebre Tinto is bright and crunchy with red fruit on the nose. Good mid-palate with a savory finish, but the fruit is the star here. This is a dry red wine that goes well with all kinds of succulent dishes, such as Spanish tapas. If you serve it chilled it’s all good, but this wine is much more than a chillable red! :)

Joan Rubió

Joan Rubió, after working over ten years as the technical director at Cava house Recaredo, returned to his childhood home, Cal Tiques, in 2015. There, he began crafting his natural wines. He crafts natural wines using biodynamic methods, focusing on grape varieties such as Xarel·lo, Macabeo, Ull de Llebre, and Monastrell.

Penedès, located west of Barcelona in Catalunya, Spain, is a key player in the natural wine world. Recognized as Catalunya's most vital wine district, Penedès boasts the prestigious DO (Denominación de Origen) status. This region is globally celebrated for producing outstanding Cava sparkling wines, crafted using the traditional Champenoise method.

In Penedès, the Mediterranean climate shapes the terroir, featuring mild winters and hot summers. The region is divided into three subregions: Baix Penedès (Low Penedès), Medio Penedès (Middle Penedès), and Alt Penedès (High Penedès). Each area presents unique climatic variations, influenced by factors like altitude and proximity to the coast. The soil composition in Penedès is diverse, predominantly calcareous, but also includes sandy and clayey varieties.

The red wines of Penedès are typically blends of local grape varieties. The main red grape, Tempranillo, is complemented by Garnacha (Garnatxa), Monastrell, and Carinena. Penedès winemakers have been innovatively blending these native varietals with international grapes like Cabernet Sauvignon and Merlot, producing increasingly notable results.

As for white wines, Penedès is expanding its repertoire beyond its famous Cava. Traditional native varietals like Xarel-lo, Macabeo, and Parellada, typically used in Cava production, are now also being crafted into delightful still wines. The introduction of Chardonnay, both in Cava blends and as a standalone varietal for still wines, is a growing trend in the region, adding a new dimension to Penedès's natural wine offerings.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.

1) Reship the package right away: due to the very high cost of shipping and returns, we must charge a re-shipping fee to be determined based on package size and shipping destination.
