This is one of the purer expressions of Chenin Blanc as a pet nat in Australia: bone dry, with a fine mousse and a palate that leads with crisp green apple and pear before a sharp mineral finish. It comes from a single east-facing block in Blewitt Springs where sandy soils over clay keep yields low and flavor concentration high.

The Fuji San is a petillant naturel made from 100% Chenin Blanc sourced from Lulu Lunn's vineyard in Blewitt Springs, McLaren Vale. The block sits on a steep, east-facing slope at around 200 metres elevation, with deep sandy soils over clay. The grapes for the pet nat come from the lower portion of the slope, where greater moisture in the soil produces fatter, juicier fruit. The vineyard is farmed organically and overseen by viticulturalist Fiona Wood.

Winemaking follows the methode ancestrale: grapes are pressed, fermented in tank, then bottled at approximately 6 grams per litre of residual sugar. The remaining sugar ferments out in bottle, creating a fine, persistent mousse and a bone-dry finish. No sulfur is added at any stage, in keeping with Jauma's zero-addition approach across all wines.

The result is a light-bodied sparkling white with lively, cleansing acidity and a flavor profile centered on crisp apple, pear, and a thread of stony minerality. It is undisgorged and sealed under crown cap, so a small amount of yeast sediment is normal. Serve cold and open slowly.

Drink this as an aperitif with oysters, clams, or any simply prepared shellfish. The crisp acidity cuts through creamy cheeses and light fried snacks equally well. It also works alongside delicate lean fish dishes where a richer white would overpower.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Jauma

James Erskine founded Jauma with the 2010 vintage, sourcing Grenache from organically farmed vineyards in McLaren Vale. Before making wine, Erskine had a career as a sommelier, winning the Gourmet Traveller Wine Sommelier of the Year award, co-duxing the Australian Court of Master Sommeliers exams, and earning a Len Evans Scholarship. He also holds an honours degree in Agricultural Science with a focus on soil chemistry, and studied at UC Davis in California. Jauma is pronounced 'Yow-ma,' the name taken from a Catalan winemaker Erskine met in Spain working with Grenache in a lighter, more precise style.

Jauma's McLaren Vale fruit is sourced from several organically managed vineyards, including blocks farmed by Fiona Wood, Lulu Lunn, and others with whom Erskine maintains long-term relationships. The Blewitt Springs Chenin Blanc vineyard, owned and farmed by Lulu Lunn, sits on deep sandy soils over clay and schist on a steep east-facing block. Erskine has not added sulfur to any wine since 2015. All wines are certified organic through NASAA, which requires both organic farming verification and demonstrated social justice practices. The farm and winery are based in Lenswood in the Adelaide Hills, on 40 acres of Peramangk Country, certified organic since 2009.

In the winery, Jauma makes zero additions and performs zero subtractions: no sulfur, no commercial yeasts, no acids, no fining agents, no filtration. The Fuji San pet nat is made by pressing Chenin Blanc grapes, fermenting the juice in tank, then bottling at approximately 6 grams per litre of residual sugar. The wine finishes fermenting in bottle, producing its fizz naturally, and is sealed under crown cap. It is not disgorged. Erskine uses a range of vessels across his range including stainless steel, old French puncheons, and clay amphora depending on the wine.

McLaren Vale, Australia

McLaren Vale is a GI wine region in South Australia, located approximately 38 kilometres south of Adelaide. It is bounded by the Gulf of St Vincent to the west, the Southern Mount Lofty Ranges to the east and south, and the Adelaide metropolitan area to the north. The region has a Mediterranean climate: warm, dry summers with winter-dominant rainfall, low humidity, and cooling afternoon sea breezes from the Gulf of St Vincent. Elevations range from around 50 metres on the valley floor to above 300 metres in the eastern foothills, with the Blewitt Springs sub-district sitting at around 200 metres and representing one of the cooler, higher-altitude pockets of the region.

McLaren Vale has over 40 distinct soil types, including deep sandy loams, grey-brown loamy sands with yellow clay subsoils, red-brown silty sands, and patches of ironstone and schist. These varied geologies have been mapped across 19 informal districts identified by the McLaren Vale Grape Wine and Tourism Association. Shiraz is by far the most planted variety, accounting for roughly 54% of total plantings, followed by Cabernet Sauvignon and Grenache. Chenin Blanc occupies a smaller foothold in the region but has a documented history in Blewitt Springs, where old plantings on sandy soils over clay produce fruit with striking concentration and acidity.
