This is what Prosecco looked like before the Charmat method took over: cloudy, skin-contact, bottle-fermented, and alive with lees texture. The 15-day maceration gives it grip and a sunset amber color you won't find in any conventional Prosecco. Citrus peel, white blossom, chestnut honey, and a savory, umami depth from extended lees contact make it one of the most distinctive sparkling wines coming out of Italy.

280 S.l.m. is Costadilà's col fondo sparkling wine sourced from a vineyard parcel in San Lorenzo, in the hills above Conegliano, province of Treviso, at 280 meters above sea level. The grapes are Glera, Verdiso, and Bianchetta Trevigiana — three native varieties of the Alto Trevigiano hills — grown on shallow marl and clay soils. The vineyard is approximately 0.9 hectares with vines averaging 35 years of age, farmed organically with no synthetic inputs.

Winemaking follows the col fondo (ancestral) method: grapes are pressed, then fermented spontaneously with native yeasts and macerated on the skins for 15 days in stainless steel. After five months on the lees, the wine is bottled with the addition of must from passito (dried) grapes that Costadilà dries on-site to trigger secondary fermentation in bottle. No sulfur is added at any stage of vinification. The wine is unfined and unfiltered, and the lees remain in the bottle.

The result is a lightly sparkling, hazy wine with an amber-golden hue from the extended skin contact. Flavors lean toward citrus, stone fruit, and white blossom, with a notable yeasty, umami undertone from the lees and a texture that is richer than conventional Prosecco. Serve cool at 45-50F, either gently upright to keep sediment settled or poured cloudy to include the lees.

Costadilà bottles this wine in clear glass — a deliberate choice to show the wine's variable, cloudy appearance and natural hue. The 280 S.l.m. is classified as Colli Trevigiani IGT, as the col fondo method and skin contact do not conform to Prosecco DOC or Prosecco Superiore DOCG production rules.

The wine's bright acidity and lees-driven texture work well with raw shellfish like oysters and clams, or a simple plate of cured meats and aged cheeses. It also handles oily, savory foods with ease — try it with sardines on toast, fried zucchini blossoms, or a sandwich of extra virgin olive oil, tomato, and oregano.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Costadilà

Costadilà, whose name translates roughly as 'the hillside over there,' was founded in 2006 by Ernesto Cattel and a group of partners in Tarzo, a small municipality in the hills above Conegliano, province of Treviso. Ernesto Cattel, who passed away in the summer of 2018 at age 54, initiated the project to recover abandoned hillside vineyards that had been left behind as industrial Prosecco production migrated to the more mechanizable valley floors. The winery is now run by Martina Celi and Alex Della Vecchia.

Costadilà operates as a polyculture farm: vines, fruit trees, vegetables, cereals, and livestock coexist on the same plots of land. Everything is farmed organically. The vineyards sit on hillside parcels around the village of San Lorenzo, where soils shift from more calcareous and rocky at higher elevations to clay and marl further down. Each wine is named for the altitude of its source parcel — 280 slm, 330 slm, and 450 slm — referencing meters above sea level.

All wines are fermented spontaneously with indigenous yeasts, with no temperature control and no sulfur added at any stage. The 280 slm undergoes 15 days of skin maceration before aging five months on the lees. Bottles are then sealed with a must from passito (on-site dried) grapes to trigger secondary fermentation in bottle, following the traditional col fondo method. The wines are bottled in clear glass and released cloudy, with live lees.

Veneto is located in the northeast corner of Italy, bordered by Trentino-Alto Adige to the north, Friuli-Venezia Giulia to the northeast, Emilia-Romagna to the south, and Lombardy to the west. The region produces a wide range of wine styles from indigenous grapes, with Glera, Corvina, and Garganega among the most planted varieties. Costadilà sits in the hills of Vittorio Veneto, in the province of Treviso, in the area historically associated with Prosecco di Conegliano e Valdobbiadene.

The Conegliano Valdobbiadene Prosecco Superiore DOCG zone spans roughly 19 by 16 miles of steep, hilly terrain between the towns of Conegliano to the east and Valdobbiadene to the west. The UNESCO-recognized hillsides sit atop a mix of glacial and marine-origin soils — primarily clay, marl, limestone, and sand — formed by the simultaneous upward movement of the African continent and ancient glacial flows. Costadilà's vineyards in San Lorenzo sit on shallow marl and clay soils. Because col fondo production and extended skin maceration fall outside DOCG rules, Costadilà's wines are labeled Colli Trevigiani IGT. Permitted blending grapes alongside Glera include the rare native varieties Verdiso, Bianchetta Trevigiana, Perera, and Boschera.
