Sgass is a pét-nat made by Sauro Maule at his estate, Azienda Agricola Il Cavallino, in San Germano dei Berici in the Colli Berici hills south of Vicenza. The wine is a blend of two indigenous Veneto varieties: Garganega, sourced from volcanic basalt soils near Gambellara, and Durella, a high-acid native grape historically grown in the Monti Lessini hills. Durella's name derives from the Italian word for 'hard,' a reference to its famously sharp, tart character, and it has been documented in this area since the 13th century.

Fermentation starts spontaneously with native yeasts. The wine is bottled before fermentation completes, so the secondary fermentation finishes in-bottle under crown cap — the defining method of pétillant naturel. The wine is never disgorged, leaving it on its lees, and is bottled unfined and unfiltered. Sulfur dioxide is used only when necessary and never exceeds 35 mg/L across the Cavallino range.

In the glass, Sgass is bone dry with sharp, persistent acidity and a fine, lively bubble. The nose leads with citrus zest and white peach, with a saline mineral note that reflects the volcanic basalt soils of the Gambellara-adjacent parcels. The palate is lean and refreshing, finishing clean and dry.

Sauro farms organically without herbicides, pesticides, or synthetic fertilizers. Vineyards are guyot-trained and maintained with natural grass cover that is cut in spring to return organic matter to the soil. Treatments are limited to copper and sulfur.

The sharp acidity and saline minerality make this a natural match for fried seafood — calamari, salt cod fritters, or tempura shrimp. It also works well alongside fresh goat cheese, lightly dressed raw vegetables, or as a straightforward aperitivo. Keep it cold and drink it young.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Sauro Maule

Azienda Agricola Il Cavallino is located in San Germano dei Berici in the Colli Berici hills south of Vicenza. The farm was founded by Lino Maule as a cattle breeding operation; the name Il Cavallino reflects Lino's affinity for horses. Sauro Maule took over in 2010 and shifted the farm's focus entirely to viticulture, replanting family-owned parcels in the Colli Berici and acquiring additional land in Selva di Montebello Vicentino and the Gambellara area. His first vintage was 2011, made in the cellar of Angiolino Maule of La Biancara — the founder of VinNatur — who guided Sauro through his early years of winemaking. The two Maules are not related.

Sauro farms approximately 5 hectares across two distinct terroirs: the white wine parcels near Selva di Montebello and Gambellara sit on predominantly volcanic basalt soils, while the red wine vineyards in the Colli Berici are heavily limestone. The old pergola-trained vines, which had been treated with herbicides, were removed and replanted using guyot training to improve soil oxygenation and microbiological activity. Natural grass cover is maintained between rows and cut in spring to return organic matter to the soil. No herbicides, pesticides, or synthetic fertilizers are used; treatments are limited to copper and sulfur. From the 2019 vintage, Sauro joined VinNatur, whose agricultural standards exceed standard organic certification requirements, including periodic soil analysis and monitoring of insects and microorganisms.

In the cellar, Sauro uses no synthetic additives. Fermentation is spontaneous with native yeasts. Sulfur dioxide is used only when strictly necessary, with residues never exceeding 35 mg/L. The Sgass pét-nat undergoes spontaneous primary fermentation, is bottled before that fermentation is complete, and finishes its secondary fermentation in-bottle under crown cap. The wine is neither fined nor filtered and is not disgorged.

Veneto, Italy

Veneto stretches from the Dolomites in the north to the Adriatic coast in the east, giving it a wide range of altitudes, soils, and mesoclimates. The Alps provide a natural barrier against cold northern air, while the proximity of Lake Garda moderates temperatures in the western zone. Hillside vineyards produce wines with pronounced acidity and definition; the valley floors tend toward riper, rounder fruit. The region is divided broadly into a western zone centered on Verona and Lake Garda (home to Valpolicella, Soave, and Bardolino), a central zone around Vicenza and Padua (Colli Berici, Gambellara, Breganze), and an eastern zone extending toward the Adriatic.

Veneto holds 14 DOCGs, 29 DOCs, and 9 IGTs, making it Italy's leading region by volume of wine produced. Its most recognized appellations include Amarone della Valpolicella DOCG, Soave DOC and Soave Superiore DOCG, Gambellara DOC, and the Prosecco DOC and Conegliano Valdobbiadene Prosecco DOCG for sparkling. The central zone around Vicenza includes the Colli Berici DOC — limestone-dominant hills known mainly for Tai Rosso — and the Gambellara DOC to the west, built on volcanic basalt soils where Garganega excels. Durella, native to the Monti Lessini, has its own appellation in Lessini Durello DOC, where its high acidity is channeled into traditional-method and pét-nat sparkling wines.
