Moscato as a bone-dry pét-nat is a provocative idea that works: the variety's orange blossom and white peach aromatics are amplified by fine bubbles, while the white calcareous soils of the Val di Noto pull everything toward saline minerality and taut acidity. Six months on its own lees adds a subtle yeasty texture that grounds the whole wine.

Fedelie Bianco is a pétillant naturel made from 100% Moscato grown on white calcareous soils in the Val di Noto, near Noto in the southeastern Sicilian province of Siracusa. The vineyards are certified organic and hand-harvested, with vines averaging 40 or more years old. The appellation falls under Terre Siciliane IGP.

Winemaking follows the méthode ancestrale: grapes are fermented with indigenous yeasts in concrete tanks, then bottled before fermentation is complete, finishing in the bottle under crown cap. The wine spends six months on its fine lees in bottle, undisgorged. No fining, no filtration, minimal sulfites added at bottling only.

The result is a hazy, pale gold sparkling wine, lightly fizzy rather than aggressively effervescent. The calcareous soils give it a saline, mineral backbone that keeps the Moscato aromatics in check — floral and stone fruit character without sweetness. Bone dry, with fresh acidity and a trace of yeasty texture from extended lees contact.

Works well as an aperitivo alongside briny snacks — olives, anchovies, or a plate of sarde a beccafico. The saline minerality makes it a natural match for fresh seafood: raw oysters, grilled prawns, or spaghetti alle vongole. Also good alongside soft fresh cheeses like ricotta or burrata.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Cantina Marilina

Angelo Paternò spent 25 years as winemaker and technical director at two of Sicily's largest commercial producers, Cantine Settesoli and then Duca di Salaparuta, before purchasing a 60-hectare property in 2000 on a hill formerly called Poggio dei Fossi, near Pachino in the province of Siracusa. He identified the site — for its white calcareous soils, natural ventilation, and position in the Val di Noto — as one of the finest viticultural areas he had seen on the island. He built the winery between 2007 and 2009. Angelo has since handed day-to-day management to his daughters, Marilina and Federica Paternò, though he continues to work in the cellar.

The estate has been certified organic since its founding in 2001. Of the 60 hectares, 35 are planted with vines; the remaining land supports polyculture including olive trees, fruit trees, and mixed farming to maintain soil health and biodiversity. The existing alberello (bush vine) plantings were preserved and are now 40 to 50 years old. The three indigenous varieties at the core of production are Nero d'Avola, Moscato, and Grecanico, with smaller plantings of Merlot, Tannat, Viognier, Chardonnay, and Insolia. The approach to minimal intervention was influenced in part by Frank Cornelissen, the Belgian natural winemaker based on Mount Etna.

All wines at Cantina Marilina are fermented with indigenous yeasts in concrete tanks, which the sisters favor for preserving fruit character and mineral freshness without wood influence. Wines are released without fining or filtration, with sulfur kept to a minimum and added only at bottling. The Fedelie Bianco follows the méthode ancestrale: primary fermentation begins in concrete, the wine is bottled before fermentation is complete, and secondary fermentation finishes in bottle under crown cap. After six months on fine lees, the wine is released undisgorged.

Sicily, Italy

Sicily is Italy's largest island and one of its most historically significant wine regions. The Val di Noto, in the southeastern corner of the island near the province of Siracusa, is among the sunniest and second-windiest zones in Sicily. Elevations here are moderate, but the consistent Mediterranean winds off the sea regulate temperatures and reduce disease pressure significantly. The soils across the Val di Noto are predominantly white calcareous limestone, which drains well, stresses the vines productively, and imparts a mineral salinity characteristic to the wines grown here.

The Val di Noto contains two key appellations relevant to Cantina Marilina: Noto DOC, which covers red and white wines from Moscato grapes in the municipalities of Noto, Rosolini, Pachino, and Avola; and Eloro DOC, known primarily for Nero d'Avola. Moscato di Noto has a long history in the area, traditionally produced as a sweet wine, though producers like Cantina Marilina now vinify it dry. Indigenous varieties Nero d'Avola, Moscato, and Grecanico dominate the traditional plantings, with old bush vines common throughout the zone.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
