Santa Chiara takes five co-planted white varieties, skin-macerates them together, and produces something that smells of dried apricot and wildflower honey but hits the palate with walnut-skin grip and a snap of tangerine peel acidity — textures you do not find in conventionally made white wine. It is one of the earliest skin-contact whites from a producer who was doing this before it had a name.

Santa Chiara is a skin-contact white from Paolo Bea's Pagliaro vineyard, a single site in Montefalco with alternating layers of gravel and clay at roughly 1,300 feet above sea level. The parcels face both east and southwest, giving balanced sun exposure across the growing season. The blend combines roughly equal parts Grechetto, Malvasia, Garganega, Sauvignon Blanc, and Chardonnay — all harvested together and co-fermented. By the time the other varieties reach full ripeness, the Chardonnay and Sauvignon are typically raisined, adding concentration and dried-fruit character to the blend.

After crushing, the wine spends at least two weeks macerating on its lees in small stainless steel vats with no temperature regulation. Two early rackings remove heavy solids, and a third racking occurs after three weeks. The wine then rests on its fine lees in stainless steel for one year before bottling. No sulfur is added at any stage. The wine is bottled without fining or filtration. Annual production is approximately 4,500 bottles.

The 2018 vintage shows the wine in a relatively fresh register for Santa Chiara: aromas of dried apricot, peach, honey, and wildflowers, with savory notes of thyme and dried citrus peel. On the palate, bright tangerine-peel acidity is balanced by walnut-skin tannins and a creamy mid-palate texture. Despite extended skin contact, the wine does not tip into heavy oxidative territory — it stays focused and mouthwatering.

Santa Chiara is labeled Umbria Bianco IGT. Paolo Bea chose not to use the Spoleto DOC designation, preferring the flexibility of the IGT classification, consistent with the estate's approach of prioritizing wine character over appellation compliance.

The tannic structure and savory, dried-fruit character make this a strong match for roasted poultry, pork with herb stuffing, or aged sheep's milk cheeses. It also works well alongside dishes with some bitterness or fat — braised endive with pancetta, chicken liver crostini, or a board of mixed charcuterie. Serve around 55–58°F to keep the acidity lively.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Paolo Bea

The Bea family has been documented in the archives of Montefalco since approximately 1500. The estate — formally Antica Azienda Agricola Paolo Bea — began commercial wine production in 1980, when Paolo Bea decided to bottle and sell wine from the family's farm rather than producing solely for personal consumption. The 15-hectare property includes 5 hectares of vines, 2 hectares of olives, and the remainder in fruit, vegetables, and grain. Sagrantino covers roughly 60% of the vineyard, with the remaining 40% planted to Sangiovese, Montepulciano, and a small parcel of mixed white varieties including the Pagliaro vineyard used for Santa Chiara.

The estate is farmed organically, with biodynamic practices applied in the vineyard. Paolo Bea was among the earliest Italian producers to adopt biodynamic agriculture. Giampiero Bea, who manages vinification and commercial operations, co-founded Vini Veri, a consortium of producers committed to organic farming and non-interventionist cellar work. His brother Giuseppe manages the vineyards. All grapes are harvested by hand.

In the cellar, Bea adds nothing: no commercial yeasts, no sulfur, no fining agents, no filtration. Fermentation begins naturally in stainless steel. White wines undergo extended skin contact — Santa Chiara spends at least two weeks on its lees, while the Arboreus and Lapideus see longer macerations. Wines are racked several times during fermentation and then left on fine lees in stainless steel before bottling. The approach results in wines that require significant bottle age and are built for the long term.

Wine region

Umbria, Italy

Umbria is Italy's only landlocked region without an international border, situated directly south of Tuscany and west of Le Marche. The Umbrian Valley and the Tiber Valley run through the region, creating the primary corridors for viticulture. The climate is Mediterranean with continental influences — cold, rainy winters and hot, dry summers — with significant diurnal temperature swings at higher elevations that help preserve acidity in white grapes. Soils vary from clay and sand in the valleys to limestone and marl on the hillsides. The Montefalco zone, where Paolo Bea is based, sits on clay and limestone soils in the province of Perugia.

Umbria holds two DOCGs and thirteen DOCs. The most prominent DOCG is Sagrantino di Montefalco, awarded in 1992, which requires 100% Sagrantino and a minimum 37 months of aging. The Montefalco DOC covers red blends and white wines. The Spoleto DOC, established in 2011, applies to wines made from at least 85% Trebbiano Spoletino. The region-wide Umbria IGT classification covers wines from any part of the region made outside DOC or DOCG rules, and is used by producers like Paolo Bea who prefer flexibility in blending and winemaking. Key white grapes include Grechetto and Trebbiano Spoletino; red grapes are led by Sagrantino and Sangiovese.
