The brief skin maceration gives Flavus a texture and saline grip you rarely find in still Pignoletto — the usual citrus-and-almond character is there, but underscored by flint, lanolin, and a savory fennel note that keeps you coming back. At 12% ABV it stays light on its feet without tasting thin, thanks to the grape's naturally firm acidity and that signature bitter finish.

Flavus is a still, lightly skin-macerated white wine from Oro di Diamanti, made entirely from Pignoletto (Grechetto Gentile) grown organically in the Bolognese hills at Zola Predosa, in the province of Bologna. The vines grow on north-west facing slopes of clayey, silty-calcareous soils. After a brief period of skin contact, the wine ages in stainless steel tank for several months before bottling unfined, unfiltered, and with no added sulfites.

Pignoletto is the signature white grape of the Colli Bolognesi, genetically identical to Grechetto Gentile (Grechetto di Todi). In still form it produces a dry, light-bodied wine with bright acidity and a characteristic slightly bitter finish — qualities amplified here by the brief skin maceration, which adds texture and a flinty, saline edge. The nose opens with lemon citrus, white peach, and hay, while the palate is savory and mineral with an almond-tinged close.

Oro di Diamanti is run by Susanna and Riccardo Diamanti. Susanna acquired the 3.5-hectare property in Zola Predosa in 2003, discovering an existing Pignoletto and Barbera vineyard on the land. After restoring the old vine system in 2007, the estate inaugurated its own winery in 2016. Farming combines certified organic practices with biodynamic techniques: green manure, manual shoot management, and no synthetic chemicals. Harvest is done by hand in small crates, followed by gentle pressing and spontaneous fermentation with wild yeasts.

Flavus sits outside the Colli Bolognesi Pignoletto DOCG appellation boundaries and is not labeled under a DOC, offering a frank and unfussy expression of what Pignoletto tastes like when handled with minimal intervention. It is one of three distinct Pignoletto bottlings from the estate, the others being a frizzante pet-nat and a Traditional Method sparkling wine.

Pignoletto's dry, savory character and slightly bitter finish make it a natural match for cured meats: mortadella, prosciutto, or salame rosa are classic Bolognese pairings. The wine's acidity and skin-contact texture hold up well against light seafood dishes, clams, or fried fish. It also works alongside fresh cow's milk cheeses and egg-based fresh pasta like tagliatelle in light broth.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Oro di Diamanti

Oro di Diamanti is a small family farm located in Zola Predosa, in the Bolognese hills of Emilia-Romagna. Susanna Diamanti purchased the 3.5-hectare plot in 2003, originally intending to clear it for vegetable production. On it she found an existing Pignoletto and Barbera vineyard, which she chose to restore instead. In 2007 the vine system was rehabilitated and approximately 500 olive trees were planted on the remaining land for oil production. The estate's own winery was inaugurated in 2016, enabling the production of Traditional Method sparkling wines and bottle-fermented styles alongside the still wines. The estate is operated by Susanna and Riccardo Diamanti.

The vineyard sits on north-west facing slopes with clayey, silty-calcareous soils. Farming is certified organic and incorporates biodynamic practices including green manure, manual shoot management, and soil work without synthetic chemicals. All grapes are harvested by hand in small crates to preserve berry integrity.

In the cellar, Oro di Diamanti favors gentle pressing, spontaneous fermentation with wild (indigenous) yeasts, and extended lees contact. Wines are bottled unfined and unfiltered with no added sulfites. The estate produces multiple interpretations of Pignoletto: a Traditional Method sparkling wine aged 24 months on the lees, a pet-nat frizzante using the ancestral method, and Flavus, a still lightly macerated white aged in stainless steel tank.

Emilia-Romagna, Italy

Emilia-Romagna spans the width of northern Italy between the Apennine mountains and the Po Valley, bordered by Tuscany to the south, Lombardy and Veneto to the north, and the Adriatic to the east. The region covers roughly 53,000 hectares under vine and is home to 19 DOCs and two DOCGs: Romagna Albana and Colli Bolognesi Pignoletto. The western half, Emilia, is dominated by the Po plain and its fertile alluvial soils, while the eastern Romagna side is shaped by the Apennine foothills, where elevations between 150 and 600 meters, limestone and clay soils, and a continental climate with warm summers and cooler nights allow for more structured whites and reds.

The hills surrounding Bologna, known as the Colli Bolognesi, are the historic home of Pignoletto, the local name for the Grechetto Gentile grape. DNA analysis confirmed it is genetically identical to Grechetto di Todi from Umbria, prompting an appellation naming controversy that ultimately resulted in the creation of the Colli Bolognesi Pignoletto DOCG in 2010 and the broader Emilia-Romagna DOC (formerly Pignoletto DOC) recognized by the EU in 2023. Soils in the Colli Bolognesi range from heavy clay on the hillsides to silty-calcareous mixes, giving the wines a distinctive mineral and savory profile. Pignoletto can be produced still, frizzante, spumante, or passito, and its signature characteristic across all styles is a slightly bitter, almond-inflected finish.
