Description

Clement Baraut Le Pitrouillet Savennières is crafted from 100% Chenin Blanc grown on biodynamic vineyards in the Loire Valley. The 2-hectare Le Pitrouillet vineyard, acquired from Nicolas Joly, features 45-year-old vines planted on schist and sandstone soils with 80cm depth. Hand-harvested grapes undergo direct pressing and natural fermentation with indigenous yeasts in neutral oak. The wine ages eight months on fine lees without sulfur additions.

Tasting notes

Distinctive apple and mineral aromas with subtle pear, honey, and earth notes. The palate displays nice freshness with balanced acidity and ripe apple nuances. Broad attack leads to round texture with gradually felt extract, creating delicious flavor development and excellent digestibility.

Food pairings

Perfect with rich fish like salmon, vegetarian dishes, roasted poultry.

Producer profile

Clement Baraut

Clement Baraut represents a significant figure in the Loire Valley's natural wine movement, particularly in the prestigious Savennières appellation. Originally from Burgundy, Baraut studied oenology in Beaune before arriving in Anjou in 1989 as a consultant oenologist. His career trajectory reflects a fundamental shift in philosophy—from conventional winemaking to becoming one of the region's most respected advocates for biodynamic viticulture.

Initially working with growers to improve their practices, Baraut recognized that wine quality fundamentally depends on vineyard work rather than cellar interventions. In the 1990s, influenced by biodynamic pioneer Nicolas Joly, he rented two hectares to test the theories of Rudolf Steiner and Johann Wolfgang von Goethe. His approach to viticulture draws particularly from Goethe's "Metamorphosis of Plants," viewing vines as sentient beings capable of communication.

For over two decades, Baraut worked within an associative structure linking winegrowers with the Chamber of Agriculture, specializing in converting vineyards to organic and biodynamic practices. He trained numerous vignerons in these methods, contributing significantly to Savennières' evolution toward more sustainable viticulture. In 2014, after years of consulting and collaboration with producers like Patrick Baudoin, he established his own domaine.

Baraut's holdings include parcels in some of Loire's most prestigious terroirs. He owns 0.4 hectares in the recently designated Grand Cru Roche aux Moines, including the famed Les Petites Combes vineyard on steep south-facing schist slopes. He also acquired two hectares in Savennières from Nicolas Joly, specifically the Le Pitrouillet parcel that had been farmed biodynamically for over 30 years. His vineyards total approximately 22 hectares across Savennières, Bonnezeaux, and other Anjou appellations.

In the vineyard, Baraut practices strict biodynamic principles with minimal intervention. He avoids all work after budbreak—no debudding, leaf removal, or topping—to minimize plant stress. The vineyards are cultivated to maintain energetic harmony, allowing natural vegetation to grow between vines. His winemaking philosophy centers on transparency and preserving what he calls "the magic of the place, the energy of the parcel."

In the cellar, Baraut employs gentle, natural vinifications. All fermentations occur spontaneously with indigenous yeasts, without any additives. Most cuvées are produced without added sulfur, though minimal amounts (typically 20mg/L total) may be added at bottling for certain wines. Aging takes place in neutral oak barrels of multiple vintages to avoid marking the wines with wood flavors. He favors slow, direct pressing to accentuate Chenin Blanc's natural depth.

Baraut's wines are characterized by their purity, precision, and digestibility. They express their schist terroirs with remarkable clarity while maintaining a distinctive freshness that sets them apart from the region's traditionally heavier styles. His influence extends beyond his own production—through decades of consulting and education, he has shaped Savennières' modern identity as a region capable of producing world-class dry white wines that balance power with finesse.

Wine region

Loire Valley, France

The Loire Valley, stretching over 600 miles along France's longest river, represents one of the world's most diverse and historic wine regions. From the Atlantic-influenced vineyards of Muscadet to the continental climate of Sancerre, this UNESCO World Heritage site produces an extraordinary range of wine styles that have captivated enthusiasts for centuries.

Known as the "Garden of France," the Loire Valley's winemaking history dates back to Roman times, though it truly flourished during the Middle Ages when the region's proximity to Paris and its navigable river made it a crucial supplier to the French court. Today, the valley encompasses numerous appellations across four main sub-regions: Pays Nantais, Anjou-Saumur, Touraine, and the Central Vineyards.

The region's calling card is its exceptional white wines, particularly those made from Chenin Blanc, which reaches its pinnacle here. From bone-dry Savennières to lusciously sweet Coteaux du Layon, Chenin Blanc demonstrates remarkable versatility. Sauvignon Blanc shines in Sancerre and Pouilly-Fumé, producing crisp, mineral-driven wines that have become global benchmarks. The Loire also excels with Melon de Bourgogne in Muscadet, creating pristine, oyster-friendly wines.

Red wine production, while less heralded, offers compelling expressions of Cabernet Franc, particularly in Chinon and Bourgueil. These wines showcase the grape's herbal complexity and age-worthy structure without the heaviness found in warmer climates. Indigenous varieties like Pineau d'Aunis and Grolleau add to the region's distinctive character.

The Loire Valley has embraced sustainable viticulture more than any other major French region, with a significant percentage of vineyards practicing organic or biodynamic farming. This commitment to environmental stewardship, combined with a new generation of innovative winemakers, has reinvigorated interest in Loire wines. From prestigious châteaux to small natural wine producers, the Loire Valley continues to offer wines of exceptional value, elegance, and terroir expression.
