Orange Wine

Orange wine — also called amber wine or skin-contact wine — is made by fermenting white grapes with their skins , just as red wine is made. Our orange wine collection spans Georgia (the birthplace of the style), Friuli, Slovenia, Alsace, Austria, and California, covering everything from delicate pét-nats to tannic qvevri ambers aged for months on the skins.

Orange wine is white wine made using a red winemaking technique called skin-contact maceration. Instead of pressing white grapes and fermenting only the juice, as is done for conventional white wine, producers leave the juice in contact with the grape skins, seeds, and sometimes stems for an extended period. This contact extracts tannins, phenolic compounds, and pigments that give the wine its characteristic amber to copper color, its fuller body, and its more complex flavor profile. The duration of maceration varies widely by producer and intended style. Short maceration of three to seven days produces lighter, more delicate expressions. Extended maceration of several months or more yields deeply structured wines with significant tannic grip and oxidative character. Orange wine is also called skin-contact wine, amber wine, or macerated white wine, and all four terms refer to the same category. At Primal Wine, the orange wine collection includes 265 bottles from Italy, France, Austria, the United States, Georgia, and beyond, all made with organically or biodynamically farmed grapes and minimal cellar intervention.

Orange wine is one of the oldest styles of wine in existence. Archaeological evidence from Georgia in the Caucasus places skin-contact fermentation in clay vessels over 8,000 years ago, making it the original method of winemaking before modern techniques separated juice from skins. Georgian producers developed the qvevri method, fermenting and aging wine in large egg-shaped clay vessels buried underground. These earthenware amphorae maintain consistent cool temperatures naturally and allow gentle, controlled oxygen exchange. UNESCO recognized Georgian qvevri winemaking as an Intangible Cultural Heritage of Humanity in 2013. In Europe, the modern revival of orange wine began in Friuli-Venezia Giulia in northeastern Italy during the 1990s, when producers including Josko Gravner and Stanko Radikon began experimenting with extended maceration and clay amphora aging after visiting Georgia. Their work drew international attention to skin-contact white wine and sparked a broader movement that has since spread across Italy, France, Slovenia, Austria, and the United States. Primal Wine carries bottles from producers in the Georgian tradition, including Pheasant's Tears, which works with indigenous varieties like Khikhvi fermented in qvevri, as well as producers across Italy, France, and California following their own interpretations of the style.

Orange wine occupies a sensory space that sits somewhere between white wine and red wine. The color ranges from pale gold to deep amber or burnt copper, and the texture is noticeably fuller and more substantial than conventional white wine because of the tannins extracted during skin contact. Those tannins create a slightly drying sensation on the palate that gives the wine structure and grip. On the nose, orange wines typically show dried apricot, quince, honey, beeswax, orange peel, walnut, hazelnut, chamomile, dried flowers, and tea leaf. Some express more oxidative notes, leaning toward apple cider or a nuttiness reminiscent of dry sherry. On the palate, the fruit flavors skew toward dried or preserved stone fruit rather than fresh, accompanied by bitter orange pith, herbal qualities, and refreshing acidity. Conventional white wine is made by pressing grapes and fermenting only the clear juice, with little to no skin contact, which is why it is light in color, low in tannins, and generally more delicate in texture. Orange wine uses the same white grape varieties but ferments them with their skins, which fundamentally changes the resulting wine's body, color, structure, and aging potential.

Almost any white grape variety can be used to make an orange wine, and the collection at Primal Wine reflects that diversity. Italian producers work with Trebbiano, Malvasia, Catarratto, Ribolla Gialla, Friulano, Greco, and Fiano, among others. Frank Cornelissen in Sicily uses Catarratto for his Susucaru Patos orange wine. Cantina Giardino in Campania works with Fiano and Greco, two of southern Italy's most ancient and storied white varieties. French producers in the collection use Pinot Gris, Gewürztraminer, Riesling, and Savagnin, particularly from Alsace and the Jura. Pierre Frick in Alsace produces skin-contact wines from Gewürztraminer and Riesling that show how these aromatic varieties transform with extended maceration. Austrian producers like Meinklang work with Welschriesling and Pinot Gris from their biodynamic estate in Burgenland. Georgian producers in the collection use indigenous varieties that are rarely seen elsewhere, including Khikhvi, Rkatsiteli, and Mtsvane. California producers including Field Recordings and Ruth Lewandowski blend varieties like Chenin Blanc, Pinot Grigio, and Vermentino. The grape variety, maceration length, and fermentation vessel all work together to shape the final style of each orange wine.

Orange wine is often a strong match for drinkers who look for low-sulfite and low-intervention bottles, though it varies by producer. The tannins extracted during skin contact act as a natural preservative, which means many orange wine producers can bottle their wines with very low amounts of added sulfur dioxide, or none at all, without compromising stability. This is one of the reasons orange wine has become central to the natural wine movement. The extended skin contact also means these wines are typically left unfined and unfiltered, which preserves more of the wine's native character and living microbiology. Some bottles in the Primal Wine orange wine collection appear slightly cloudy or have visible sediment for exactly this reason. Both are signs of a wine that has not been stripped of its texture or complexity through heavy processing. Each product page on Primal Wine notes the sulfite level and vegan status, so shoppers who are filtering by those criteria can check each bottle individually before buying.

Orange wine is one of the most food-versatile styles in the glass, largely because its tannins, acidity, and complexity give it the structure to hold up to dishes that would overwhelm a conventional white wine. Mediterranean and Middle Eastern food is a natural pairing: hummus, falafel, grilled halloumi, lamb kebabs, roasted eggplant, and mezze spreads all work well. Orange wine also handles spice, fermentation, and umami better than most whites, which makes it a reliable choice with Thai curries, Korean barbecue, miso-glazed fish, and Vietnamese pho. Root vegetables, mushrooms, lentil dishes, and anything with earthy depth complement the wine's oxidative notes. Aged cheeses, charcuterie, and cured meats are classic pairings. As for serving temperature, orange wine shows best between 55 and 60 degrees Fahrenheit, which is slightly warmer than a typical white wine. Over-chilling tightens the tannins and mutes the aromatics. Many orange wines also open up noticeably after an hour of air, so decanting or simply letting the glass sit before drinking is worth the patience. Opened bottles often taste better on the second or third day, as controlled oxygen exposure adds dimension rather than stripping it away. Most bottles in the Primal Wine orange wine collection are unfined and unfiltered, so pouring carefully from a slightly upright bottle will help if sediment is present.
