Carbonic maceration on Passerina is an uncommon move that gives this wine a juicy, almost crunchy citrus lift — lemon pith, white peach, and a faint herbal note — at just 11.5% ABV. It is one of those bottles that disappears fast at the table without anyone overthinking it.

White Lab is 100% Passerina from a roughly one-hectare vineyard in Atessa, a town in the lower Sangro River Valley in the province of Chieti, Abruzzo. The vines grow on clayey soils with marl in the subsoil at approximately 300 meters elevation, with a southern exposure toward the Adriatic Sea and the Maiella massif to the west.

Winemaking is straightforward and low-intervention: carbonic maceration for 15 days in sealed steel and fiberglass tanks, then aged in stainless steel. No sulfur dioxide is added at any stage. The wine is bottled unfined and unfiltered. Production is tiny, around 800 bottles per vintage.

Passerina is an ancient indigenous white grape of central Italy, most commonly found in the Marche and Abruzzo regions. It produces wines with bright citrus and stone fruit character, natural freshness, and a clean, dry finish. In Bevilacqua's hands, the carbonic maceration technique adds a juicy, lightly aromatic quality that keeps the wine vibrant and easy to drink.

The LAB project takes its name from the initials of Luca's two sons, Lorenzo Amerigo and Leonardo Andrea Bevilacqua. The wines are intentionally uncomplicated: high drinkability, no additions, made from Abruzzo's native varietals on vineyards that have never seen synthetic chemicals.

Works well with simply prepared seafood: grilled branzino, fried anchovies, or crudo. The wine's clean acidity and light body also cut through soft fresh cheeses and vegetable antipasti. Keep it cold and pour freely.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Luca Bevilacqua

Luca Bevilacqua is a working sommelier based in Abruzzo who makes wine from vineyards in Atessa, in the lower Sangro River Valley in the province of Chieti. The LAB label takes its name from the initials of his two sons, Lorenzo Amerigo and Leonardo Andrea Bevilacqua. Unlike most Italian sommeliers trained primarily on conventional wine, Luca was drawn to natural and minimal-intervention winemaking and launched his own project to make wine from Abruzzo's indigenous varietals.

The vineyards in Atessa are planted to Montepulciano, Passerina, and Trebbiano on clayey soils with marl in the subsoil at around 300 meters elevation, with southern exposure toward the Adriatic. The vines have never received synthetic chemicals; only copper in small quantities is applied when needed. Luca focuses almost exclusively on Abruzzo's native grape varieties, working the vineyards inherited from family.

Winemaking across the LAB range prioritizes drinkability and minimal intervention over structure or extraction. For White Lab, grapes undergo carbonic maceration for 15 days in sealed steel and fiberglass tanks, then are racked and aged in stainless steel. No sulfur dioxide is added, and the wine is bottled unfined and unfiltered. Total production of White Lab is approximately 800 bottles per vintage.

Wine region

Abruzzo, Italy

Abruzzo sits on the central Adriatic coast of Italy, bounded by the Apennine Mountains to the west and the Adriatic Sea to the east. The region divides into two distinct climatic zones: a coastal strip with a Mediterranean climate of warm, dry summers and mild winters, and a mountainous interior with more continental conditions and colder temperatures. Most vineyard land lies in the hilly band between the coast and the Apennine foothills, 15 to 20 miles inland, at elevations up to 600 meters. The Gran Sasso massif, the highest peak in the Apennines at 2,912 meters, and the Maiella generate strong diurnal temperature swings that help retain acidity in the grapes. The province of Chieti, in the south of the region, accounts for roughly 75% of Abruzzo's total vineyard area.

Abruzzo's key appellations are Montepulciano d'Abruzzo DOC, Trebbiano d'Abruzzo DOC, and Cerasuolo d'Abruzzo DOC, with the Colline Teramane Montepulciano d'Abruzzo DOCG representing the region's top red wine designation. White grape production is a smaller part of the overall picture, with indigenous varieties including Trebbiano, Pecorino, Passerina, and Cococciola accounting for a minority of plantings. Wines not falling under the named varietal DOCs are often labeled Terre di Chieti IGT, a broad category covering the Chieti province and used widely by small independent producers. Around 80% of Abruzzo wine is made by cooperatives; a new generation of small estate producers working with native varietals and low-intervention methods has grown steadily since the 2010s.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
