The UJO is Jauma's most accessible Cabernet Franc: purple-fruited and briary with a leafy, stalky tension from whole-bunch fermentation and a thirst-quenching acidity that makes it work lightly chilled. The Chenin and Shiraz rosé additions keep it nimble and bright rather than dark or extracted — rare for McLaren Vale red fruit.

The UJO — short for Unidentified Jauma Object — is a whole-bunch Cabernet Franc-led blend from James Erskine's McLaren Vale sources. The 2019 is made up of 80% Cabernet Franc, 10% Chenin Blanc, and 10% Shiraz rosé, all farmed organically and vinified with zero additions: no sulphur, no fining agents, no filtration. It is sealed under crown cap.

Lighter in structure than Jauma's single-vineyard Birdsey Cab Franc, the UJO reads as a purple-fruited, briary, high-acid red built for early drinking. The whole-bunch fermentation with native yeasts adds a leafy, stalky tension that runs through the finish. Chenin contributes texture and the Shiraz rosé component keeps the colour bright and the body nimble.

McLaren Vale's diverse soils — ironstone, sandy loam, and ancient Maslin Sand formations — and its Mediterranean climate, moderated by Gulf St Vincent sea breezes and cool air off the Mt Lofty Ranges, underpin the freshness that defines this wine. Erskine picks early by regional standards to preserve acidity and keep alcohol restrained.

Serve lightly chilled. Best within a few years of vintage given the zero-sulphur winemaking approach.

Works well with dishes that have herbal or earthy notes: roast chicken with herbs, a lamb kofta with yogurt, or a platter of charcuterie and aged hard cheese. The bright acidity cuts through fat cleanly. Also good alongside mushroom-based pastas or lentil dishes where Cabernet Franc's leafy character complements rather than clashes.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Jauma

James Erskine founded Jauma in 2010 after a decorated career in hospitality and wine. He topped the Court of Master Sommeliers exams in Melbourne in 2008, was awarded the Gourmet Traveller Sommelier of the Year, and held a Len Evans Fellowship. He also holds an honours degree in Agricultural Science with a focus on soil chemistry and studied oenology at the University of California Davis. Before launching Jauma, he was a founding member of Natural Selection Theory — a collaborative natural winemaking group with Tom Shobbrook, Anton von Klopper, and Sam Hughes — which played an early role in establishing Australia's natural wine culture. The first Jauma wines were made from McLaren Vale Grenache in 2010. Jauma is pronounced 'yow-mah,' the Catalan word for James.

Jauma's McLaren Vale fruit comes from organically farmed vineyards tended by growers including Fiona Wood, Lulu Lunn, Peter and Karen Cahill, and Jim Zarella, with whom Erskine maintains long-term relationships. The Lenswood farm in the Adelaide Hills — Jauma's base and winery — spans 40 acres on Peramangk Country and has been certified organic since 2009. McLaren Vale vineyard sites include Seaview, Blewitt Springs, Clarendon, and McLaren Flat, with soils ranging from sandy loam over clay to ironstone ridges. Erskine's target is dry-grown or minimally irrigated vines, picked early for freshness and moderate alcohol.

Inside the winery, Jauma operates with a strict zero-additions policy: no added sulphur, no commercial yeasts, no acids, no tannins, no fining agents, no filtration. Fermentations run on wild yeasts. Whole-bunch inclusion is used across the red wine range to add structure and aromatic complexity. All wines are sealed under crown cap. Erskine has not used sulphur since at least 2015. The UJO is the lighter, more accessible end of his Cabernet Franc range — the grape also appears in the single-vineyard Birdsey and Seaview bottlings, which see more extraction and oak.

McLaren Vale, Australia

McLaren Vale sits approximately 38 kilometres south of Adelaide in South Australia, framed by the Gulf St Vincent to the west and the Southern Mount Lofty Ranges to the east and south. The region sits within the Adelaide metropolitan area and is internationally recognised, included among the Great Wine Capitals of the World. Elevations range from near sea level at the coast to around 350 metres in the ranges. The climate is Mediterranean: warm, dry summers and mild, wet winters. Warm days are moderated by sea breezes off the Gulf of St Vincent and cool air descending from the Mt Lofty Ranges, which together preserve natural acidity in the grapes and support the region's significant concentration of certified organic vineyards.

McLaren Vale has over 40 distinct soil types — among the most geologically diverse wine regions in Australia. Common formations include ironstone, sandstone, sandy loams over red clay, terra rossa, and the ancient Maslin Sand, some dating back up to 750 million years. The region is phylloxera-free and has been under vine since 1836. Informal subregions referenced by producers include Blewitt Springs, McLaren Flat, Seaview, Clarendon, and Willunga, each with distinct soil profiles. Shiraz, Grenache, and Cabernet Sauvignon are the flagship red varieties, though a new generation of producers, including Jauma, work with Cabernet Franc, Chenin Blanc, Arneis, and other varieties suited to organic, low-intervention farming.
