The pairing of Cinsault and Gewurztraminer in a pet nat is genuinely unusual — you get the red-fruited tang of Cinsault with the lychee and rose-petal lift of Gewurztraminer, all wrapped in fine, lively bubbles. At 12% ABV it stays light and easy to drink through the whole bottle.

The Beav is a pétillant naturel from Joe Swick, made from a blend of Cinsault and Gewurztraminer sourced from organically and sustainably farmed vineyards in Oregon. Swick is based in Newberg at the northern end of the Willamette Valley and works with growers across Oregon and Washington, favoring cool-climate, non-irrigated sites.

Pet nat is produced by the méthode ancestrale: fermentation begins in tank with native yeast, and the wine is bottled before that fermentation completes. The residual sugar feeds a secondary ferment in bottle, trapping CO2 as fine, persistent bubbles. Swick's pet nats are not disgorged, meaning the wine retains some natural sediment. No fining, no filtration.

The Cinsault brings a light red-fruited character and lower tannins, while the Gewurztraminer adds its signature floral lift and lychee-tinged aromatics. The result is a pinkish-hued sparkling wine that is dry to off-dry, with bright acidity and a refreshing, low-alcohol structure at 12% ABV.

Drink it cold, straight from the fridge. Give the bottle a gentle swirl before pouring to reintegrate any settled lees, or leave the last pour behind if you prefer a clearer glass.

Serve ice cold alongside spicy Thai or Korean food, where the floral fruit and gentle bubbles cut through heat. It also works well as an aperitif with charcuterie, fresh cheeses, or a plate of raw oysters. The low tannins and bright acidity make it flexible at the table.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Swick Wines

Joe Swick is a fifth-generation Oregonian, born and raised in Portland. He got his start in wine working as a shipping and receiving clerk at a specialty organic food store in Portland, where he tasted widely and met local winemakers. He worked his first harvest as a cellar assistant at Owen Roe in 2003, then spent nearly a decade working harvests across the world, including stints in Tasmania, Portugal, Italy's Piedmont, and France, where he spent time with Simon Busser in Cahors and Julien Labet in the Jura. He founded Swick Wines in the Willamette Valley in 2013.

Swick sources grapes from organically, biodynamically, and sustainably farmed vineyards across Oregon's Willamette Valley and Columbia Gorge, as well as Washington's Columbia Valley and Yakima-area sites. He works only with non-irrigated vineyards in cooler climate locations. Soils across his vineyard sources range from sandy loam and volcanic basalt to marine sediment, depending on the site.

In the cellar, Swick uses native yeast fermentation only, with no temperature control. He does not fine or filter his wines. Sulfur additions, when used at all, are minimal and applied only when necessary. His pet nats are bottled before primary fermentation finishes, allowing CO2 to develop in bottle through the méthode ancestrale. Many of his wines are made with zero sulfur added.

Wine region

Willamette Valley, USA

The Willamette Valley stretches roughly 150 miles from the Portland area south toward Eugene, protected by the Coast Range to the west and the Cascade Mountains to the east. This geography produces a long, temperate growing season with warm days, cool evenings, and strong diurnal shifts that preserve natural acidity in the grapes. Marine air pushes in through the Van Duzer Corridor, a low gap in the Coast Range, moderating afternoon temperatures during the growing season.

The valley contains eleven nested sub-AVAs, including Dundee Hills, Chehalem Mountains, Yamhill-Carlton, Ribbon Ridge, McMinnville, and Eola-Amity Hills. Soils vary significantly across the valley: volcanic red Jory clay loam derived from basalt dominates sites above 300 feet, while Missoula Flood-deposited silts and sedimentary loams cover the lower elevations. The region is best known for Pinot Noir and Chardonnay, but producers like Swick work with a much wider range of varieties including Gewurztraminer, Pinot Gris, Riesling, and Rhone grapes from both Oregon and neighboring Washington State.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
