Teroldego is one of the rarest vinifera varieties planted in New York, and this is one of very few American examples made with zero additions beyond a minimal sulfur dose at crush. At 10.3% ABV with 40% whole-cluster fermentation, it delivers a savory, peppery red-fruit profile — cranberry, pomegranate, black pepper — with a bright, almost racy acidity that keeps each sip focused and dry.

Wild Arc Farm's Teroldego 2018 is made from 100% Teroldego grapes grown on the North Fork of Long Island, sourced from the former Southold winery vineyards, on stony loam soils moderated by the Long Island Sound and Peconic Bay. Teroldego is a northern Italian variety native to Trentino-Alto Adige, and it is sparsely planted in the United States, with the North Fork proving a compatible home: the sandy loam soils, sea breeze, and early-ripening tendency of the variety align well with the region's maritime growing conditions.

Winemaking at Wild Arc Farm is low-intervention throughout. The grapes were fermented 40% whole-cluster for five weeks with 20ppm sulfur added at crush, then pressed into old French oak barrels where they rested for 10 months before bottling. No fining or filtration was applied, and fermentation proceeded with native yeasts.

Wild Arc Farm is a regenerative permaculture and viticulture project on roughly 10 acres in Pine Bush, Hudson Valley, run by Todd Cavallo and Crystal Cornish since 2016. They source grapes from growers across New York State and apply natural winemaking practices across their range, including hybrid and vinifera varieties. The only additive in this wine is the 20ppm SO2 dose at crush; nothing was added at bottling.

At 10.3% ABV, this is a genuinely low-alcohol red with structured acidity and a savory, herbal character that reflects both the variety and the North Fork terroir. Serve slightly cool, around 58-62°F.

The savory, herbal character and bright acidity make this a natural match for cured meats, charcuterie, and dishes built around guanciale or pancetta. It works well alongside pasta with tomato-based sauces or braised chicken. The low alcohol and dry finish also make it a good candidate for hard, aged cheeses like Parmigiano-Reggiano or aged pecorino.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Wild Arc Farm

Wild Arc Farm was founded in 2016 by Todd Cavallo and Crystal Cornish, who left Brooklyn after a combined 30 years in New York City to establish a farm in Pine Bush, in the Mid-Hudson Valley hamlet sometimes called the Gateway to the Gunks. The property sits on approximately 10 acres on a former perennial nursery. Cavallo and Cornish describe the project as an experiment in regenerative permaculture and viticulture, and in addition to wine they produce cider, kombucha, piquette, and other fermented beverages.

Wild Arc sources grapes from multiple New York State vineyards, including sites in the Finger Lakes, Hudson River Region, and Long Island, as well as farming some acreage directly. On their own land, the approach is biodynamic and permaculture-focused, using guild planting among vines and fruit trees, and growing their own vegetables alongside the winemaking operation. Purchased fruit sourcing ranges from regenerative organic to sustainable depending on the grower.

Winemaking at Wild Arc is consistently low-intervention: native yeast fermentation, no fining or filtration, and minimal sulfur — typically 20ppm at crush, with nothing added at bottling. Cavallo uses old French oak barrels for aging across the range, avoiding new oak. The Teroldego was produced with 40% whole-cluster fermentation over five weeks before pressing into barrel for a 10-month rest. Wild Arc is also widely credited with reviving the piquette format in the United States, producing pomace wines from their spent grape skins starting with the 2017 vintage.

The North Fork of Long Island AVA sits on a narrow glacial moraine peninsula in eastern Suffolk County, sandwiched between the Long Island Sound to the north and Peconic Bay to the south, with the Atlantic Ocean roughly 10 miles away. The AVA was established in 1986 and is home to over 40 wineries and approximately 3,000 planted acres. Geologically, the soils are sandy loam — well-drained, low-fertility ground that limits vine vigor and concentrates fruit. The maritime influence from three surrounding bodies of water moderates winter temperatures and extends the frost-free growing season by up to a month compared to upstate New York AVAs.

The North Fork is the warmer, sunnier of Long Island's two main sub-AVAs and is capable of ripening vinifera red varieties that struggle further north in New York State. Merlot, Chardonnay, and Cabernet Franc are the most widely planted varieties, but the region has increasingly attracted attention for northern Italian varieties including Teroldego and Lagrein, which thrive in the sandy loam soils and benefit from the natural salinity and acidity the sea breezes impart. The region's combination of warm summers, moderating ocean influence, and free-draining soils allows for full vinifera viticulture without reliance on hybrid grape varieties.
