Graciano is almost unheard of as a California rosé grape, and its naturally high acidity gives this wine a vinous, dry backbone you won't find in most pink wines. The one-hour skin contact adds grip and a deep salmon hue, while strawberry and cranberry fruit are kept honest by herbal notes and a tart, lingering finish.

Stipa is 100% Graciano sourced from the Ibarra-Young Vineyard in the Los Olivos District AVA, Santa Barbara County. The Graciano block was planted in the late 1990s as a suitcase clone — own-rooted, farmed organically since inception, and under regenerative organic management. The wine is named for Michel DeAscentiis's grandmother, Rose Stipa.

Grapes were foot-trodden and left on the skins for one hour before pressing. Fermentation proceeded with native yeasts only. The wine aged eight months in neutral French oak, then was bottled unfined and unfiltered at 12% ABV. No additions were made beyond a small amount of sulfur at bottling.

Graciano is a high-acid Spanish variety rarely grown in California, and at Ibarra-Young it consistently produces fruit with sharp natural acidity — a key reason it is directed to rosé rather than red production. The short maceration pulls color and a touch of tannin from the skins without extracting heavy phenolics, keeping the wine fresh and vinous.

On the palate, the wine delivers strawberry and cranberry fruit with herbal undertones and a firm, dry finish driven by Graciano's natural acidity.

The high acidity and firm texture make this a strong match for grilled fish tacos with salsa verde, charcuterie boards with cured Spanish-style meats, or a simple tomato and herb salad. It also holds up well alongside lightly spiced dishes where many delicate rosés fall flat.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Say When was founded in 2013 by Rachel Silkowski DeAscentiis, who began her career as assistant winemaker at Loring Wine Company in Lompoc after studying agricultural business at Oregon State University. Her husband Michel DeAscentiis, formerly a creative director, joined the project from the beginning, overseeing branding while Rachel leads all winemaking decisions. The winery operates out of a shared production facility in Lompoc, California, with the couple splitting time between Lompoc and Los Angeles.

Say When sources grapes exclusively from small, family-owned vineyards across Santa Barbara County and the Central Coast. As of 2020, every vineyard source is farmed using organic, biodynamic, or regenerative organic practices. Each wine in the portfolio is given a distinct name and label. Stipa was named for Michel's grandmother, Rose Stipa.

All Say When wines undergo native yeast fermentation with no commercial yeast or nutrient additions. Sulfur is used sparingly as a preservative at bottling, but no other additions are made to any wine. Wines are bottled unfined and unfiltered. The Stipa Graciano Rosé specifically uses foot-treading, one-hour skin contact, and eight months of aging in neutral French oak before bottling.

The Los Olivos District AVA was established in 2016 as a sub-appellation within the larger Santa Ynez Valley AVA in Santa Barbara County. It sits between Ballard Canyon to the west and Happy Canyon to the east, occupying a broad alluvial bench at elevations ranging from 400 to 1,000 feet. The terrain is relatively flat, and soils are predominantly the Positas-Ballard-Santa Ynez association — fine sandy loam over clay subsoils — which drain well and support even vine ripening across the district.

The climate in Los Olivos District is classified as Winkler III, warmer than Sta. Rita Hills to the west but moderated by cool nights and thin marine fog that burns off quickly in the morning. This diurnal temperature swing supports natural acidity retention in grapes and makes the AVA well suited for Bordeaux, Rhône, and Iberian varieties. The district contains approximately 1,121 planted acres across 47 vineyards and is home to some of the oldest vines in the Santa Ynez Valley.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
