Sovracchiaro is a blend of Falanghina and Bombino Bianco grown on Kimmeridgian calcareous limestone soils in Apricena, inside Gargano National Park in northern Puglia. The vineyards sit at approximately 200 meters elevation, where the white rocky soils reflect intense Mediterranean light and proximity to the Adriatic brings a saline edge to the fruit. The farm has been in the Passalacqua family since the early 1900s, obtained organic certification in 1999, and has been farmed biodynamically since the early 2000s.

In the cellar, Valentina keeps intervention to a minimum. Grapes are spontaneously fermented with native yeasts, and the wine is never fined or filtered. No sulfites are added at any stage. The result is a wine that is alive and texturally present without being heavy, with a slight natural haze and occasional light sediment.

At 11% ABV, Sovracchiaro sits in genuinely light-bodied territory. The nose leads with stone fruit, honeycomb, and citrus blossom. On the palate it is juicy and round, with peach and white plum flavors, a lift of lemon-lime, and a persistent saline, mineral finish that reflects the limestone soils directly.

The saline, citrus-driven profile works well with raw or simply prepared seafood: grilled branzino, linguine alle vongole, or a plate of local burrata with sea salt. It also pairs well with fried appetizers and light vegetable dishes where a high-acid, low-alcohol white adds contrast without overwhelming.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Valentina Passalacqua

Valentina Passalacqua's estate is located in Apricena, inside the Gargano National Park in northern Puglia. The farm has been in her family since the early 1900s. After several years working in business and law in London, Passalacqua returned to Puglia and began building the winery. Over a decade she expanded vineyard holdings from 45 to 80 hectares using EU agricultural grants available for converting arable land in the region.

The estate obtained organic certification in 1999 and has been farmed biodynamically since the early 2000s, making Passalacqua one of the earliest proponents of biodynamic viticulture in Puglia. The 80 hectares of vines grow on Kimmeridgian calcareous limestone soils at approximately 200 meters elevation. Indigenous varieties planted include Bombino Bianco, Falanghina, Nero di Troia, Greco, Negroamaro, and Aleatico — varieties rooted in the region's Magna Graecia heritage.

All wines across the estate are spontaneously fermented with indigenous yeasts and are never fined or filtered. The Sovracchiaro range, sold under the eponymous Valentina Passalacqua label, is bottled without added sulfur. Passalacqua is best known internationally for her Calcarius project, a separate line focused on specific parcels of exclusively Kimmeridgian limestone soil, which launched in 2018 and gained widespread attention in natural wine markets.

Wine region

Puglia, Italy

Puglia stretches from the Gargano Peninsula in the north to the tip of the heel of the Italian boot in the south, covering a long Adriatic and Ionian coastline. The Gargano subregion, where Valentina Passalacqua farms, sits in the northern part of the region and is geologically distinct: its soils are Kimmeridgian calcareous limestone formed during the Upper Jurassic period, over 150 million years ago. Vineyards in Apricena sit at around 200 meters elevation, with the Adriatic Sea close enough to push salinity into the air and moderate summer heat.

Puglia is Italy's second-largest wine-producing region by volume and is dominated by red varieties including Primitivo, Negroamaro, and Nero di Troia. White wine accounts for a minority of production, but indigenous varieties including Bombino Bianco, Falanghina, and Verdeca are increasingly recognized for their quality. Most white wines from the region fall under the broad Puglia IGP designation. The San Severo DOC in the Daunia area and the broader Puglia IGP are the primary appellations for white production in northern Puglia.
