Cascina degli Ulivi

Suppose there is one name that resonates in the heart of natural wine lovers worldwide. In that case, it is Cascina Degli Ulivi and its late leader, Stefano Bellotti—a pioneer of biodynamic farming and natural winemaking. In 1977, Stefano took over the family farm in Southern Piedmont's Gavi area and embraced organic farming practices, guided by the wisdom of his neighbor Pietro Toccalino.

Stefano began with just one hectare, soon gaining organic certification and converting to biodynamic farming in 1984. Today, the farm spans 18 hectares and is a holistic ecosystem rich in biodiversity. Viticulture is integrated with cultivating grains, fruits, vegetables, and livestock rearing. The farm's clay and iron-rich soils nurture vineyards, some of which are venerably old, with local varieties such as Cortese, Timorasso, Riesling Italico, and Chasselas for the whites, and Nebbiolo and Nibio for the reds.

Cascina Degli Ulivi is now led by Stefano's daughter, Ilaria, and his former student, Filippo, who are dedicated to carrying Stefano's legacy into the future. These biodynamic wines, all products of wild fermentation and free from added SO2 or other winemaking interventions, are timeless gems of rustic power, elegance, and complexity.

The terroir of Piedmont is as varied as it is unique. The composition of the soil ranges from calcareous clay in areas like Barolo and Barbaresco to sandy soils in regions like Roero. This diversity in soil composition, combined with the region's climate, results in wines with a pronounced character and complexity. The terroir imparts the wines with a minerality and elegance that is hard to find elsewhere.

Piedmont is home to several indigenous grape varieties. Nebbiolo, the king of Piedmontese grapes, is responsible for the region's most renowned wines, including Barolo and Barbaresco. Barbera and Dolcetto are other red varietals that have carved a niche for themselves, offering wines with vibrant fruit profiles. On the white side, Moscato is the star, producing the sweet and effervescent Moscato d'Asti. Other notable white grapes include Arneis and Cortese, the latter being responsible for the crisp Gavi wines.

Piedmont boasts an impressive array of wines and denominations. The most prestigious are the DOCG (Denominazione di Origine Controllata e Garantita) wines, which include Barolo, Barbaresco, Gavi, and Moscato d'Asti, among others. The region also has numerous DOC (Denominazione di Origine Controllata) wines, such as Barbera d'Asti, Dolcetto d'Alba, and Roero. Each denomination has its own set of regulations and standards, ensuring the quality and authenticity of the wines produced.

Piedmontese cuisine is as rich and varied as its wines. Traditional dishes like "tajarin" (thin pasta) and "agnolotti" (stuffed pasta) pair beautifully with Barbera's acidity.
