Lisounette is one of the rare Loire rosés built around Cinsault, which keeps the wine transparent and refreshing — wild cherry, watermelon, and blood orange land on a palate that finishes with a salty mineral snap. No oak, no sulfur, no filtration: what you get is exactly what the fruit and the concrete egg gave up.

Lisounette is Sébastien David's first rosé, made from Cinsault and Cabernet Franc grown in Saint-Nicolas-de-Bourgueil, Loire Valley. Bottled as Vin de France, the blend falls outside the AOC's Cabernet Franc-only rules, giving David freedom to work with Cinsault — a grape that contributes low tannin, aromatic lift, and a light, refreshing structure. The vines sit on the appellation's characteristic soils of sand, gravel, and tuffeau limestone, with the oldest Cabernet Franc on the estate planted during the Second World War era.

In the cellar, David works with whole clusters, ferments with native yeasts using carbonic maceration for approximately 25 days, then lightly presses. The wine is then aged in Nomblot concrete eggs — ovoid vessels that allow consistent lees movement without imparting oak character — before being bottled unfined and unfiltered with no added sulfur.

The result is bone-dry, savory, and distinctly low-intervention: notes of wild cherry, watermelon, and blood orange with a pronounced saline finish. It drinks best well-chilled and is meant for immediate enjoyment rather than cellaring.

Serve well-chilled alongside grilled sardines, a simple tomato salad with fleur de sel, or a plate of cold charcuterie. The wine's saline backbone also makes it a natural match for fresh oysters or steamed clams. Loire Valley goat cheeses like Crottin de Chavignol work well if you want to stay regional.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Sebastien David

Domaine Sébastien David is a family estate in Saint-Nicolas-de-Bourgueil tracing its winemaking lineage back to 1634. Sébastien, born in 1974, is the fifteenth generation to work the land. He returned from abroad in 1998 to take over the estate after his grandfather passed, and produced his first vintage in 1999. His grandfather was notably part of the group that created the Saint-Nicolas-de-Bourgueil AOC in 1937.

The estate works 15 hectares of Cabernet Franc, with the oldest vines planted by Sébastien's grandparents during the Second World War era. Farming is certified organic through Ecocert and biodynamic, with Sébastien following lunar calendars for vineyard work — earning him the local nickname 'Hurluberlu,' roughly translating as 'eccentric man who looks at stars to farm.' He uses minimal copper (reportedly around 600g per hectare), co-plants vines with trees for biodiversity, and practices zero tillage using a tool called a Rolofaca that folds weeds at the base rather than removing them, preserving soil structure and moisture.

Vinification happens in an underground cave originally used for mushroom cultivation, where the temperature holds constant at approximately 54.3°F year-round — conditions that slow fermentation and allow full sugar conversion without intervention. David works with whole clusters, native yeasts, and carbonic maceration lasting roughly 25 days, then ages in Nomblot concrete eggs and amphorae. Nothing is added or removed: wines are bottled unfined, unfiltered, and with no added sulfur.

Loire Valley, France

The Loire Valley runs roughly 600 miles along France's longest river, spanning climate types from maritime in the west near Nantes to more continental further inland toward Sancerre. Saint-Nicolas-de-Bourgueil sits on the right bank of the Loire in the Touraine subregion, halfway between Tours and Angers, where Atlantic influences are moderated by woodland slopes that block north winds. The appellation covers approximately 1,080 hectares within a single commune, making it one of France's few communal AOCs.

Soils across Saint-Nicolas-de-Bourgueil fall into three main types: silty gravel from former Loire river islands, sand and gravel alluvial deposits that dominate the lower terraces, and tuffeau — a soft Turonian chalk limestone — on the upper hillsides bordering the forest. These soil variations produce noticeably different wine characters: sand and gravel sites yield lighter, fruit-forward wines with fresh tannins, while tuffeau plots tend toward more structure and complexity. The AOC permits almost exclusively Cabernet Franc (known locally as Breton); Lisounette is bottled as Vin de France because Cinsault falls outside the appellation's permitted varieties.
