Pure Pinot Noir from Savigny-lès-Beaune vinified in Henri Chauvet's Auvergne cellar, this bottling bridges Burgundian fruit with volcanic-region sensibility. Serve at 57-61°F; decanting 15-20 minutes opens the aromatics. Pairs beautifully with boeuf bourguignon. Similar to village-level Savigny-lès-Beaune or natural Pinot Noir from Burgundy's Côte de Beaune.

Product Description

"Waiting for the Rain"—the cuvée name references a scorching summer that left Auvergne's vineyards parched. Henri Chauvet En Attendant la Pluie 2023 is 100% Pinot Noir sourced from a renowned organic grower in Savigny-lès-Beaune, Burgundy. Henri Chauvet whole-bunch macerates the fruit for 10 to 12 days in a combination of wooden casks and stainless steel, then ages the wine nine months in used 228-liter barrels followed by an additional nine months in bottle before release. Henri Chauvet adds only 1 g/HL of sulfites prior to bottling. No fining or filtration.

Tasting notes

Clear ruby with garnet reflections. Aromas of fresh cherry, black currant, and subtle forest floor notes. The palate is fluid and balanced, with fine-grained tannins, bright acidity, delicate red fruit, and a persistent finish. Good aging potential despite its immediate accessibility.

Boeuf bourguignon, roasted chicken with herbs, rabbit in mustard sauce, Époisses cheese, duck pâté, grilled quail.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package gets returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee to be determined based on shipping address and number of bottles. Shipping wine is extremely expensive, we are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to re-route a package after it's been shipped, we can do so upon payment of a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancelling fee – the amount depends on how big the order is. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat/frost-related issues. We offer ice-packs upon request. please let us know should you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct, otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times with no success or if you fail to retrieve your package at the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Henri Chauvet

Henri Chauvet arrived in the village of Boudes in spring 2021, purchasing 10.5 hectares of vines on the steep hillsides of Auvergne in central France. Born in 1987, Henri left a career in insurance and banking to pursue winemaking, earning his viticulture and oenology diploma through correspondence courses before seeking hands-on training with some of the most respected vignerons in the Rhône Valley.

His apprenticeships proved formative. Henri worked alongside Jérôme Bressy at Gourt de Mautens in Rasteau, then with the legendary Thierry Allemand in Cornas—a producer renowned for crafting some of the most sought-after Syrahs in France through meticulous vineyard work and minimal intervention in the cellar. These experiences shaped Henri's approach: respect for terroir, organic farming, spontaneous fermentation, and restraint with sulfur additions.

A car trip through Auvergne convinced Henri that this overlooked region held extraordinary potential. The volcanic soils around Boudes differ markedly from vineyards just kilometers north, featuring iron oxide-rich red clay, quartz, decomposed granite, and profoundly volcanic basalt with blue marl. This complexity of terroir across his parcels allows Henri to produce distinct cuvées that express specific soil types. His vineyards are planted to Gamay, Pinot Noir, and Chardonnay on steep slopes that demand entirely manual work.

Henri began converting to organic farming immediately upon arrival and employs natural winemaking methods throughout his range—whole-bunch fermentation, indigenous yeasts, aging in stainless steel or older oak barrels, and bottling without fining or filtration. Sulfur additions vary by cuvée, with Contre-Nature receiving zero and others minimal amounts before bottling. His debut 2021 vintage produced ten different wines, each exploring what the varied terroirs of Boudes could yield. Production remains small, and demand has grown rapidly as word spreads about this serious young vigneron revitalizing Auvergne's volcanic vineyards.

Auvergne occupies the volcanic heart of central France, a rugged landscape shaped by ancient eruptions that left behind dramatic puys (volcanic domes), crater lakes, and mineral-rich soils unlike anywhere else in French wine country. The region lies roughly 400 kilometers south of Paris, centered around the city of Clermont-Ferrand. Viticulture here dates back to Roman times, though Auvergne remained largely unknown to international wine markets until a new generation of growers began attracting attention in recent years.

The Côtes d'Auvergne appellation, granted AOC status in 2011, stretches across 53 communes on volcanic hillsides between 350 and 500 meters elevation. The village of Boudes, south of Issoire, has earned particular recognition for expressive Gamay and Pinot Noir grown on its distinctive soils. Unlike the granite-dominated terroirs of nearby Beaujolais, Auvergne's vineyards sit on a patchwork of volcanic basalt, blue marl, iron oxide-rich red clay, decomposed granite, quartz, and limestone. This geological diversity allows producers to craft markedly different wines from parcels just meters apart.

The continental climate brings cold winters, warm summers, and significant diurnal temperature variation that preserves acidity in the grapes. Harvest typically occurs later than in warmer French regions, and the high-altitude vineyards on steep slopes require almost entirely manual labor. Gamay dominates red wine production, with Pinot Noir also permitted under the appellation. Chardonnay accounts for most white wine, though plantings remain limited.

A wave of young natural wine producers has revitalized Auvergne's reputation. These vignerons embrace organic and biodynamic farming, spontaneous fermentation, and minimal sulfur additions—methods well-suited to the region's pristine volcanic terroirs. Their wines showcase a distinctive minerality and freshness that reflects both the altitude and the ancient volcanic soils, positioning Auvergne as one of France's most exciting emerging wine regions.
