Tasting notes

San Colombano is a rare Tuscan white grape rarely seen as a varietal wine, and the late-October harvest date gives it enough ripe fruit to carry the 4 to 5 days of skin contact without turning astringent. The vitrified concrete aging keeps it taut and saline, making it more interesting than most zero-zero orange wines in its price range.

  • Style: Dry, medium-bodied orange wine; apricot, lemon zest, rock salt; light tannin; 12% ABV
  • Grapes & Terroir: San Colombano (Verdea); organic and biodynamic; tufaceous soils; 200-250m; Tuscany-Umbria border
  • Winemaking: Spontaneous fermentation; 4-5 days skin maceration; no temp control; 6-8 months in vitrified concrete and inox steel; unfined, unfiltered, no added SO2
  • Serving: Serve at 50-54F; no decant needed; enjoy within 2-3 years of vintage
  • Pairing: Fried anchovies, pecorino fresco, prosciutto, bottarga pasta, cured meats
  • Similar To: For fans of low-intervention orange wines from obscure indigenous grapes; similar textural profile to light Friulian skin-contact whites

Confine is made from San Colombano (known in Tuscany as Colombana bianca, a synonym of Verdea), an ancient white grape grown on a 1-hectare plot on the Tuscany side of the Tuscany-Umbria border near Montepulciano. The vines are 35 to 40 years old, trained to spurred cordon, and planted in tufaceous soils at 200 to 250 meters elevation. Grapes are harvested by hand in late October, later than most white varieties.

Fermentation is spontaneous with 4 to 5 days of skin maceration and no temperature control. The wine then rests 6 to 8 months in a combination of vitrified concrete and inox steel vessels before being bottled unfined, unfiltered, and with no added SO2. It is a zero-zero wine in the strictest sense.

The result is dry but textured, with the extended hang time giving the fruit enough weight to stand up to the light tannin from skin contact. Expect apricot, rock salt, and lemon zest, with a chewy mid-palate. Medium body, moderate acidity, and a saline finish that keeps it refreshing.

Works well with dishes that have some fat or brine to match its texture and salinity: try it with fried anchovies, a pecorino fresco, or a simple pasta with olive oil and bottarga. The chewy tannin holds its own against cured meats like prosciutto di Parma or coppa.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

I Cangianti

I Cangianti was founded in 2019 by brothers Matteo and Luca Stoppini. The winery is located in Umbria in a space formerly used as a carpentry workshop beneath the family home, while the vineyards are on the Tuscan side of the border near Montepulciano. The project grew from the brothers' backgrounds in wine production, tasting, and marketing, alongside a connection to how their grandparents farmed and made wine.

Farming is organic and biodynamic with no chemical inputs and permanent ground cover between rows. The San Colombano vineyard is 1 hectare, with vines 35 to 40 years old trained to spurred cordon. Annual production of Confine is approximately 3,000 bottles. The Prugnolo Gentile vineyards used for their red wines sit slightly higher at 280 to 300 meters in sandy and tufaceous soils.

All fermentations are spontaneous with native yeasts and no temperature control. Wines are aged in vitrified concrete vessels and inox steel, then bottled without fining, filtering, or added sulfur dioxide. The winery produces a small range including Confine (San Colombano skin-contact), Murato and Promiscuo (Prugnolo Gentile-based reds), and Skizzo (a Metodo Ancestrale rosato from Prugnolo Gentile).

Wine region

Tuscany / Umbria, Italy

The Tuscany-Umbria border zone near Montepulciano sits at 200 to 300 meters elevation, with soils ranging from sandy and tufaceous on the Tuscan side to clay and silt closer to Umbria. The climate is Mediterranean with warm, dry summers and cooler nights in the hills, giving moderate diurnal variation that preserves acidity in white varieties. The Montepulciano area of Tuscany is primarily known for Vino Nobile di Montepulciano, built on Prugnolo Gentile (a Sangiovese clone), but the border zone supports older plantings of indigenous white varieties like San Colombano.

Umbria, directly to the east, is landlocked and bordered by Tuscany, Marche, and Lazio. Its best-known appellations are Montefalco Sagrantino DOCG and Orvieto DOC, but the region also holds a diverse range of IGT and Vino Bianco producers working with indigenous varieties outside formal DOC frameworks. The cellar of I Cangianti is based in Umbria while the vineyards sit across the border in Tuscany, making Confine a literal cross-border wine. Both regions share tufaceous and volcanic soils in parts, contributing mineral and saline qualities to wines made with minimal intervention.
