Chi Mera delivers exactly what a col fondo frizzante from this part of Emilia-Romagna should: lime zest, fresh herbs, white peach, and a chalky almond finish, all wrapped in the gentlest of bubbles. It is lighter and drier than Prosecco and far less manipulated, with the lees contact adding a subtle textural weight that keeps it interesting across a full meal. The old-vine Bellussi-trained Pignoletto at Castello di Serravalle gives the wine genuine local character you won't find in larger-production frizzante.

Chi Mera is a refermented field-blend frizzante from a single 40-year-old vineyard at Castello di Serravalle, in the Valsamoggia valley on the Bologna-Modena border. The vines — Pignoletto, Albana, Trebbiano Modenese, and Alionza — grow in predominantly clay soils and are trained using the traditional Bellussi system, a high-canopy method that protects buds from frost but cannot be mechanized. Harvest takes place in mid-September; grapes are picked together and whole-cluster pressed without destemming.

Winemaker Flavio Restani ferments only the free-run juice (mosto fiore) with native yeasts at 18–20°C. The wine rests on its lees through winter into spring, at which point frozen Albana must from the same harvest is added to trigger a second fermentation in the bottle — the ancestral or rifermentato method long practiced in this part of Emilia-Romagna. The wine is never disgorged, leaving visible lees sediment. No fining, no filtration, and no added sulfites.

In the glass Chi Mera shows hazy pale straw with fine, gentle bubbles. The nose is direct: lime zest, fresh herbs, a touch of white peach, and a faint nuttiness from the lees. The palate is light, dry, and high in acidity, with a chalky finish and the faintly bitter almond note characteristic of Pignoletto. Serve well chilled and open carefully — secondary sediment will be present. Once poured, drink promptly.

The wine is classified as Emilia Bianco Frizzante IGP. Koi holds certified organic status for all of its approximately 3.5 hectares of vineyards.

Pour it alongside mortadella, culatello, or any Emilian salumi — the acidity and fine bubbles cut cleanly through the fat. It works equally well with fried foods: gnocco fritto, salt-cod fritters, or vegetable flatbreads. A wedge of young Parmigiano Reggiano or a light pasta in broth is all it needs at the table.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Koi

Koi was founded in 2018 by Flavio Restani, who trained in enology at the University of Bologna and worked at several Emilian estates before striking out on his own, including formative years at Il Farneto where he developed expertise in sparkling wine production. The winery takes its name from the Japanese word for carp, an animal that swims against the current — Restani's stated reference to working with native varieties and traditional methods in a region where industrial production remains the norm.

Restani farms approximately 3.5 hectares of certified organic vineyards spread across Valsamoggia (Colli Bolognesi) and parcels near Castelvetro and Formigine in the Modenese. The vines range from 30 to 50 years old and are planted on predominantly clay soils. Most are trained in the Bellussi system — a high-canopy, wide-spacing method (approximately 4m x 6m) that lifts the canopy to nearly 4 meters, protecting buds from frost in the humid winter lowlands. The system requires extensive hand labor and cannot be mechanized, which is why it has largely been abandoned across the region. Restani has also purchased surrounding non-vine agricultural land to buffer his certified organic parcels from neighboring conventional farming.

In the cellar, Restani works with whole-cluster pressing, native yeast fermentation, extended lees aging, and no fining, filtration, or added sulfites. His sparkling wines follow the refermentato or ancestral method: the base wine rests on its lees through winter, then a small quantity of frozen must from the same harvest is added in spring to trigger the secondary fermentation in bottle. The wines are not disgorged, leaving lees in the bottle. Annual production is approximately 4,000 bottles across all cuvees.

Emilia-Romagna stretches diagonally across northern Italy from Piacenza in the northwest to Rimini on the Adriatic coast. The Po Valley dominates the northern flatlands, while the Apennine foothills along the southern edge provide elevation, ventilation, and well-draining soils that produce the region's most serious wines. The climate is continental with hot summers and cold winters; the hills moderate temperatures and reduce humidity compared to the plains. Koi's vineyards sit in the Valsamoggia valley, roughly halfway between Modena and Bologna, at the boundary of the Colli Bolognesi.

Emilia-Romagna is Italy's heartland for fizzy wines. The dominant red is Lambrusco, a family of native grapes producing frizzante and spumante reds across multiple DOCs centered on Modena, Reggio Emilia, and Parma. For white wines, Pignoletto — genetically identical to Grechetto Gentile — is the key variety of the Colli Bolognesi, achieving DOCG status in 2010. The Colli Bolognesi Pignoletto DOCG covers 182 hectares at roughly 200 meters elevation across the provinces of Bologna and Modena, with soils of clay, limestone, marl, and sandstone. The traditional refermentato style — base wine re-fermented in bottle using frozen musts from the previous harvest — has deep roots here and predates the modern pét nat movement.
