Just one day of skin contact keeps Case Sparse Bianco positioned between a structured white and a proper orange wine, picking up enough texture and amber color to intrigue without overwhelming. The Grechetto brings almond and stone fruit weight, while Trebbiano keeps acidity lively and the finish clean and mineral. Case Sparse Bianco is a blend of 50% Grechetto and 50% Trebbiano, grown organically on 12 hectares of vines in the hamlet of Monte Melino, near the shores of Lake Trasimeno in Perugia province. The vineyards sit at 250 to 300 meters above sea level on clayey soils with a calcareous base. Proximity to Lake Trasimeno tempers the climate, moderating summer heat and extending the growing season.

Grapes are hand-harvested and spend one day macerating on the skins before pressing. Fermentation is spontaneous with no temperature control, no added yeasts, and no chemical corrections. The wine is aged in stainless steel and bottled in spring, unfiltered, unfined, and with no added sulfites.

One day of skin contact gives the wine a faint amber hue and a textural lift without the tannin grip of a fuller orange wine. On the nose, ripe white fruit, dried apricot, hay, and almond; on the palate, it is juicy and fresh with balanced acidity and a mineral, slightly saline finish.

Winemaker Danilo Marcucci revived winemaking at Conestabile della Staffa in 2015 after the estate had sold its grapes to the local cooperative since 1956. The vines were planted in the early 1970s and the land was never treated with chemicals during the decades of disuse.

Works well with lake fish preparations, fried anchovies, or soft-rind cheeses. The light tannin grip makes it a good match for antipasto plates with cured meats and marinated vegetables. Also try it with pasta dressed in olive oil, lemon, and herbs.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Conestabile della Staffa

Conestabile della Staffa is an estate in the hamlet of Monte Melino, in the province of Perugia. The Conestabile family originated in Orvieto and the Della Staffa line is from Perugia; the two noble families were united by an arranged marriage in the 1700s. At its peak in the late 1800s and early 1900s, the estate totaled over 700 hectares of mixed agricultural land with more than 100 hectares under vine, and it was the most important winery in the Trasimeno-Perugino area, producing over 10,000 hectoliters per vintage. Wine production collapsed after World War II as agricultural labor left for cities, with the last vintage from the old cellar made in 1956.

From 1956 until 2015, no wine was produced on the property and grapes were sold to the local cooperative. The land was never treated with chemicals during this period. Danilo Marcucci, who married Alessandra Conestabile della Staffa, revived winemaking at the estate starting with the 2015 vintage. Today the estate comprises 12 hectares of vines planted in the early 1970s, farmed organically, and located at 250 to 300 meters above sea level on clayey soils with a calcareous base near Lake Trasimeno.

Marcucci, who has worked alongside figures such as Lino Maga, Eduardo Valentini, Cappellano, and Vittorio Mattioli, brings a no-intervention philosophy to the cellar. Fermentations are spontaneous with no temperature control, no commercial yeasts, and no chemical corrections. Wines are bottled unfiltered and unfined, with no added sulfites. Native Umbrian varieties, including Grechetto, Trebbiano, Ciliegiolo, Sangiovese, Gamay del Trasimeno, Canaiolo, and Sagrantino, form the backbone of the range.

Umbria is a landlocked region in central Italy bordered by Tuscany, Lazio, and Marche. The terrain is predominantly hilly, and the climate is broadly Mediterranean with cold, wet winters and hot, dry summers. A key moderating factor in the western subzone around Perugia is Lake Trasimeno, Italy's largest lake on the peninsula, which brings gentle summer breezes and milder winters to the surrounding vineyards. This moderating effect supports slower, more even grape ripening and helps preserve natural acidity.

The region holds two DOCGs: Torgiano Rosso Riserva and Montefalco Sagrantino. Key DOCs include Orvieto, Colli del Trasimeno, Colli Perugini, and Montefalco, alongside the broad Umbria IGT that gives producers maximum flexibility. The principal white grapes are Grechetto and Trebbiano Toscano, which anchor most Umbrian white blends and the Orvieto DOC. Sagrantino, native to Montefalco, produces the region's most tannic and age-worthy reds, while Sangiovese is the most widely planted red variety across the region. Gamay del Trasimeno, locally grown around the lake and genetically closer to Grenache, is another regional curiosity.
