Full carbonic maceration on both the Merlot and Pinot Grigio keeps this wine juicy and low-tannin, with strawberry compote, black tea, and a saline herbal finish. It occupies a genuinely unusual space between chilled red and dark rosé, and it earns that description rather than just claiming it.

Flat Out is a 60% Merlot and 40% Pinot Grigio blend from organically farmed vineyards at Mount Compass and Mount Torrens in the Adelaide Hills. Both varieties were fermented via full carbonic maceration for just over a week, then blended. The wine is unfined, unfiltered, and zero SO2 added.

Mount Compass sits at the southern end of the Adelaide Hills GI on the Fleurieu Peninsula. The soils there are glacial sand over yellow clay, which Mark Warner describes as a secret weapon for acid retention. The site has a cooler, more coastal feel than the nearby McLaren Vale, despite being geographically adjacent.

The result sits somewhere between a chilled light red and a dark rosé. Carbonic fermentation amplifies the fresh strawberry and red fruit character while keeping tannins minimal. There is a savory, herbal quality on the finish with a faint salty edge. Drink it well chilled, ideally within a year or two of release.

Serve well chilled alongside charcuterie, grilled chicken thighs, or a simple tomato salad with herbs. The low tannin and bright acidity make it flexible at the table. Works equally well as a porch wine on its own.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Borachio

Borachio was founded in 2016 by Alicia Basa and Mark Warner, who are based in Carey Gully in the Adelaide Hills. Before launching their own label, Mark and Alicia worked with James Erskine at Jauma, and Mark also spent time with Sylvain Martinez in the Loire Valley. The name Borachio refers to a skin used for holding wine, commonly a goat's, or alternatively a drunkard.

Borachio sources all fruit from organically farmed vineyards at Mount Compass and Mount Torrens. Mount Compass is a sandy-soiled site on the Fleurieu Peninsula with relatively high rainfall and a coastal character that Mark distinguishes clearly from the warmer McLaren Vale nearby. The deep sandy soils are a consistent reference point in Mark's winemaking notes, valued for their role in driving acidity in the finished wines.

All wines are made without additives or preservatives, including zero added SO2. Winemaking across the range favors carbonic maceration, whole-cluster pressing, and native yeast fermentation. Wines are unfined and unfiltered. Borachio bottles a small annual production from McLaren Flat, South Australia.

Adelaide Hills, Australia

The Adelaide Hills is a registered Geographic Indication (GI) in South Australia's Mount Lofty Ranges, stretching from Mount Pleasant in the north to Mount Compass at its southern extent. Vineyards sit at elevations above 300 metres, with peak sites between 500 and 700 metres above sea level. The region is one of Australia's coolest wine areas, with summers that are cool and dry and winters that are crisp and wet.

Soils across the region range from sandy loams to clay loams over clay subsoils, with shale and ironstone present on higher ridges. Mount Compass, at the southern edge of the GI bordering the Fleurieu Peninsula, has glacial sand over yellow clay soils and a coastal maritime influence from its proximity to Gulf St Vincent. The Adelaide Hills GI contains two formal sub-regions, Lenswood and Piccadilly Valley, and is best known for Sauvignon Blanc, Chardonnay, and cool-climate Pinot Noir.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
