Carbonic maceration on white grapes is a genuinely unusual move — it pulls honeysuckle and yellow plum character out of Trebbiano and Passerina while the skin contact adds a light tannic grip and amber hue. At 10.5% it is remarkably easy to drink without being thin, with a dried apricot and balsamic finish that lingers well past the last sip.

Bianco Carbo is Lammidia's carbonic maceration take on the native white grapes of Abruzzo. The blend of Trebbiano, Passerina, and Cococciola is harvested by hand from organically farmed vineyards in the hills surrounding Villa Celiera, in the Pescara province, at approximately 700 meters above sea level within Gran Sasso National Park. Soils here are clay and limestone, and vines average around 25 years old.

Whole bunches go directly into cement tanks sealed from oxygen, where intracellular fermentation begins inside the intact berries using only indigenous yeasts. After roughly two weeks of carbonic maceration the grapes are pressed and the wine continues to refine in the same cement vessels. No fining, no filtration, no added sulfites at any stage.

The color lands in amber-gold territory, deeper than a conventional white and lighter than a full skin-contact orange. On the nose it reads as honeysuckle, dried apricot, and a faint balsamic lift. The palate is dry, with enough tannic grip from the skin contact to give structure, and an acidity that keeps things focused rather than heavy. At 10.5% ABV it stays light on its feet.

This is labeled Vino Bianco rather than under a DOC designation, which gives Lammidia full flexibility to work with the grape blend and technique they want without regulatory constraints.

Works well as an aperitivo alongside briny olives, cured meats, or a board of aged pecorino. The textural grip and acid make it a natural match for lightly oiled seafood dishes — think grilled branzino or a simple shrimp crudo. It also handles bold vegetable preparations like roasted artichokes or an agrodolce preparation without getting lost.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Lammidia

Lammidia is the project of childhood friends Davide Gentile and Marco Giuliani, who grew up together in the Pescara Colli neighborhood of Abruzzo and reconnected during their university years in Rome. They began making wine in 2010 as a hobby, with their first fermentation failing badly enough that they enlisted a local grandmother to perform the folk ritual against 'l'ammidia' — the evil eye in Abruzzese dialect — which apparently worked. The name stuck. Their first official commercial release came in 2013.

The winery is based in Villa Celiera, a small village in the Pescara province of Abruzzo, at roughly 700 meters above sea level inside Gran Sasso National Park. Lammidia works with approximately 5 hectares of vineyards across multiple sites, sourcing from trusted growers who farm without pesticides, herbicides, or systemic treatments. Varieties in the portfolio include Montepulciano, Trebbiano, Passerina, Cococciola, and Pinot Nero, among others. Vines are trained on the traditional pergola system, which provides canopy shade and protects fruit from the heat at lower elevations.

Neither Davide nor Marco trained formally as winemakers or oenologists; their approach developed through hands-on experimentation in the vineyard and cellar. All fermentations are spontaneous with indigenous yeasts. They designed and built many of their own cement tanks and amphorae, and also use steel and fiberglass vessels. No fining, no filtration, and no added sulfites are used across the range. Their motto is 'uva e basta' — grapes and that is it.

Wine region

Abruzzo, Italy

Abruzzo sits in central Italy between the Adriatic Sea to the east and the Apennine mountain range to the west, home to Gran Sasso, the highest peak in the Apennines at 2,912 meters. The region's climate shifts dramatically from the warm, dry coastline to a more continental interior where high-altitude vineyards experience significant diurnal temperature swings. This thermal range is a key factor in preserving acidity in the grapes. Soils vary from the Pliocene marine sediments near the coast to clay, limestone, and marl further inland.

The dominant appellations are Montepulciano d'Abruzzo DOC and Trebbiano d'Abruzzo DOC, both established in the late 1960s and early 1970s. Native white varieties Trebbiano, Passerina, and Cococciola are the backbone of Abruzzo's white wine production, with Passerina known for its bright acidity and tropical fruit character and Cococciola prized for freshness. A growing cohort of small producers, particularly in the Pescara hills around Gran Sasso National Park, are farming organically and working outside the DOC framework to express these varieties on their own terms.
