Tasting notes

Colombard grown on basalt in the Hérault Valley produces a pet nat with real mineral tension — lemon peel, white peach, and a floral edge that sets it apart from the softer Gascon style. Six months on the lath gives it a faint bready texture without masking the grape's natural citrus bite. It is the kind of low-alcohol sparkling wine that does not ask anything of you except a cold glass.

Belzebrut is a pétillant naturel made from 100% Colombard grown on basalt soils in the Hérault Valley. The grapes are pressed directly and the must is not settled before bottling. Anthony Tortul sources from organic and biodynamically farmed parcels across the Hérault, and this wine is classified as Vin de France, giving him full freedom to work with Colombard outside the constraints of Languedoc AOC rules.

The wine undergoes spontaneous fermentation with indigenous yeasts, spends a minimum of six months on the lath in bottle, and is disgorged by hand. It is bottled by gravity, unfined, unfiltered, and released with no added sulfites. At 11% ABV, the mousse is gentle and the wine retains the grape's naturally high acidity.

Colombard is a cross of Chenin Blanc and Gouais Blanc, originally from the Charentes. In the Hérault, grown on basalt, it produces wines that are more mineral and taut than the fleshier expressions common in Gascony. The result here is a wine defined by citrus snap and floral lift rather than richness.

Drink young and cold, 44–48°F, and expect some natural sediment from the disgorgement process. Once open, it moves fast.

The high acidity and light body make this a natural match for raw oysters, sushi, and ceviche. It also works well alongside Thai fish cakes or Vietnamese spring rolls, where the citrus cut handles the fish sauce and herbs. A simple plate of fresh goat cheese and cucumber rounds things out without fighting the wine.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

La Sorga

Anthony Tortul was born in Foix, Ariège, a town in the foothills of the Pyrenees. He moved to Toulouse to study chemistry, and after the 2001 explosion at the AZF fertilizer factory in Toulouse he changed course, eventually training as an oenologist and working across vineyards in the south of France and the Rhône Valley for six years before founding La Sorga in 2008.

La Sorga launched as a négociant operation, with Tortul sourcing organic and biodynamic grapes from over 40 parcels spread throughout the Languedoc. From 2013 he also began farming his own vineyards. Today he works with a total of 25 hectares across the Aude and Hérault departments, split across nine vineyard sites. Approximately half of his holdings are farmed biodynamically and the remainder organically. Soils across the portfolio range from calcareous clay and shale to basalt, sand, and granite. He works with more than 20 grape varieties, including Terret Blanc, Aramon, Aubun, Mauzac, Cinsault, Grenache, Carignan, Mourvèdre, Vermentino, and Colombard.

Every wine at La Sorga is produced with spontaneous indigenous yeast fermentation only. There is no fining, no filtration, and no added sulfites across the range. Tortul produces roughly 30 cuvées per vintage in small quantities, each tied to a specific parcel, grape, or vinification approach. The Belzebrut pet nat is one of his signature sparkling wines: direct press, no settling of the must, bottled by gravity, aged six months on the lath, and disgorged by hand.

Wine region

Languedoc, France

Languedoc is the largest wine-producing region in France by area, stretching roughly 240 kilometers along the Mediterranean coast from the Spanish border and the Pyrenees in the southwest to the Rhône and Provence in the east. The northern edge is bounded by the Massif Central and the Cévennes. The Hérault is the central department of the region, home to some of its most geologically varied vineyards, including basalt outcrops, schist, limestone, clay, and ancient river gravels. The climate is Mediterranean: hot, dry summers, mild winters, and significant wind from the Tramontane, which reduces disease pressure and helps maintain freshness in the grapes.

Languedoc carries 23 AOC appellations covering roughly 16% of production, with the remainder falling under IGP Pays d'Oc or the catch-all Vin de France designation. Notable appellations include Pic Saint-Loup, Faugères, Saint-Chinian, Minervois, Corbières, Terrasses du Larzac, and Picpoul de Pinet. Red blends dominate, built on Grenache, Syrah, Carignan, Mourvèdre, and Cinsault. White varieties including Grenache Blanc, Roussanne, Marsanne, Clairette, Vermentino, and Piquepoul are planted throughout. Colombard does not appear in most AOC specifications, so wines made from it in the region typically carry the Vin de France label. Languedoc holds around 33% of France's organic vineyard area, and the dry Mediterranean climate makes certified organic and biodynamic farming more viable here than in wetter northern regions.
