This is a textbook méthode ancestrale pet nat — fine, natural bubbles, a light strawberry-rhubarb fruit profile, and the subtle mineral tension that comes from Johan Vineyard's marine sedimentary soils. Fermentation in Oregon-made terracotta amphora gives it a slightly rounder texture than you'd get from stainless, without adding any oak influence.

Civic Winery's Amphora Pet Nat is a pétillant naturel rosé made from 66% Pinot Noir and 34% Chardonnay sourced from Johan Vineyard in Oregon's Van Duzer Corridor AVA. Johan is a 175-acre Demeter-certified biodynamic estate where farming follows Rudolf Steiner's biodynamic preparations, no-till practices, and cover crops managed in part by on-site sheep and chickens. The vineyard's marine sedimentary soils over siltstone bedrock, combined with afternoon Pacific winds funneling through the Coast Range gap at speeds 40–50% stronger than the broader Willamette Valley, produce fruit with firm natural acidity and thicker skins.

The wine is fermented and aged in Oregon-made terracotta amphora produced by Andrew Beckham's Novum Ceramics in the Chehalem Mountains. Fermentation begins spontaneously with native yeast and is arrested before completion, then bottled under crown cap to complete its secondary fermentation in the bottle — the méthode ancestrale. The wine is not disgorged, not fined, not filtered, and contains no added sulfites.

In the glass it pours with a slight haze and fine, persistent bubbles typical of an undisgorged pet nat. Expect red fruit notes of strawberry and rhubarb with a bright, refreshing finish and the light texture that comes from amphora fermentation rather than oak or stainless steel.

Serve chilled alongside charcuterie, fresh goat cheese, or oysters on the half shell. Its bright acidity and light effervescence also cut through fried foods well — think tempura vegetables or fish and chips. Works equally well as an aperitif on its own.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Civic Winery

Civic Winery was founded by Craig Weicker and produced its first vintage in 2018. The winery is housed in a 10,000-square-foot building at 50 East 11th Avenue in downtown Eugene, Oregon, originally constructed in 1937 using materials sourced from the same supplier as Eugene's historic Civic Stadium — the origin of the winery's name. Weicker came to winemaking from careers in the coffee industry and affordable housing development, and built Civic as a multi-use space that also includes a natural wine bar, bottle shop, and the Lion and Owl restaurant.

Civic sources fruit exclusively from vineyards farmed with organic practices at minimum, with no use of synthetic herbicides including glyphosate. For the Amphora Pet Nat, grapes come from Johan Vineyard, a Demeter-certified biodynamic estate in the Van Duzer Corridor. The winery ferments and ages its wines almost exclusively in terracotta amphora made by Andrew Beckham's Novum Ceramics, the first commercial producer of terra cotta amphorae for winemaking in North America, operating out of the Chehalem Mountains southwest of Portland.

Winemaking at Civic follows a zero-zero approach: native spontaneous yeast fermentation, no fining, no filtration, and no added sulfites. The Pet Nat is made via méthode ancestrale — fermentation begins in amphora, and the wine is bottled under crown cap before fermentation finishes, completing its carbonation in the bottle. It is not disgorged, leaving the wine with its natural yeast sediment and characteristic slight haze.

The Van Duzer Corridor AVA was formally established in January 2019 as a sub-appellation of the Willamette Valley, encompassing approximately 59,871 acres in Polk County with nearly 1,000 acres under vine. The region takes its name from a natural gap in Oregon's Coast Range that channels afternoon Pacific marine winds at speeds 40–50% stronger than surrounding Willamette Valley AVAs. This daily cooling effect, which typically sets in around 2 PM, extends the growing season, thickens grape skins, elevates phenolics, and keeps natural acidity high — conditions that favor Pinot Noir and Chardonnay.

Soils in the Van Duzer Corridor are predominantly uplifted marine sedimentary loams and silts over shallow siltstone bedrock, which distinguishes the region from the iron-rich volcanic soils of the neighboring Eola-Amity Hills to the east. The high silt and clay content buffers soil pH and supports a diverse soil microbiome. Wines from the corridor tend toward pronounced minerality, bright acidity, and red fruit character. Johan Vineyards, founded in 2005 and Demeter-certified biodynamic since 2010, was one of the principal advocates for the AVA's establishment.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
