This pet nat pulls off something most Chardonnay bubbles don't: tropical fruit and off-dry fizz with real acidity driving the finish, not yeast and bread. The Basket Range ironstone-clay site gives it a faint mineral-salty edge that keeps it from being one-dimensional.

Borachio's Fruit Zone Volleyball is 100% Chardonnay sourced from an organically farmed site in Basket Range, Adelaide Hills. The vineyard sits on a clay-heavy ridge with chunks of ironstone in the soil at roughly 350 metres elevation — a site that, as winemaker Mark Warner notes, has far more in common with the cool hills character of Adelaide Hills than the warmer valley floors below. The grapes are whole-cluster fermented via carbonic maceration in stainless steel with zero forced extraction, then bottled with residual sugar to complete fermentation in bottle — the classic pétillant naturel method. No sulfur is added at any stage; the wine is unfined and unfiltered.

In the glass this is golden-hued with a gentle, persistent bead. The palate is off-dry, with lively acidity keeping the residual sugar in check. Expect tropical fruit — pineapple, golden passionfruit, ripe pear — with a faint salty-mineral edge and a clean, tangy finish. Mark's own tasting shorthand covers it well: tropical juice, pine-lime, and the smell of seaweed on a warm beach.

This is a Chardonnay pet nat that skips the heavy yeast-and-bread character typical of the style. The energetic acidity and the fruit-forward, slightly sweet fizz make it a high-drinkability wine that benefits from being served cold. Pour carefully or open gently — there is live sediment in the bottle.

Serve with fresh oysters, fish tacos with salsa verde, or a plate of cold prawns. The off-dry fizz and bright acidity cut through spice and salt equally well. Works alongside creamy soft cheeses like brie or a fresh chèvre.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Borachio

Borachio is the project of Alicia Basa and Mark Warner, based in Carey Gully in the Adelaide Hills. Before starting Borachio, Mark and Alicia worked with James Erskine at Jauma, one of the foundational natural wine producers in South Australia. They source fruit from organically farmed vineyards at sites including Mount Compass and Mount Torrens on the Fleurieu Peninsula, as well as Basket Range in the Adelaide Hills proper.

All Borachio wines are made without any additions or subtractions — no sulfur, no fining agents, no filtration. The couple regards high natural acidity as the key to stability in no-sulfur winemaking, and deliberately works with sites and varieties that reinforce that acidity. Their home territory spans from McLaren Vale to Mount Compass, a Mediterranean-influenced climate with deep sandy soils that Mark and Alicia credit with amplifying the acid in finished wines.

Winemaking across the range favours carbonic maceration in stainless steel, whole-cluster pressing, and minimal handling. Fermentation relies entirely on native yeasts. Wines see little or no oak, and pet nats like the Fruit Zone Volleyball are bottled with residual sugar mid-fermentation to capture natural carbonation. The aesthetic is low-alcohol, high-acid, and fruit-driven — what Mark describes as wines without the gross bits like tannins and alcohol.

Adelaide Hills, Australia

Adelaide Hills sits within the Mount Lofty Ranges in South Australia, with the best vineyards concentrated between 300 and 550 metres above sea level. The elevation generates cool temperatures and significantly lower summer highs than coastal South Australia, with cool nights that preserve natural acidity in the fruit. The region is roughly 70 kilometres long and spans a range of aspects, altitudes, and soil types. Basket Range, one of the steeper sub-areas within Adelaide Hills, has become a focal point for natural winemakers and sits at approximately 450 metres elevation, with soils of loamy red and blue clay over sandstone interspersed with schist, ironstone, and shale.

Sauvignon Blanc, Pinot Noir, Chardonnay, Pinot Gris, and Shiraz are the dominant varieties across Adelaide Hills. Chardonnay thrives in the cooler, elevated sites and typically expresses citrus, stone fruit, and mineral character in this climate. The region is not divided into formal sub-appellations with separate GI status, but distinct communities like Basket Range, Piccadilly Valley, and Lenswood are recognised for their particular expressions. Many of the natural wine producers operating in Adelaide Hills — including Borachio — source from organically farmed sites across Basket Range and the broader Fleurieu Peninsula.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
