Tasting notes

This is the final vintage from the Mount Torrens Sangiovese vines, making it a one-off snapshot. The whole-bunch semi-carbonic process pulls out bright raspberry and blue fruit with almost no tannin weight, then the cool-climate Adelaide Hills acidity takes over and keeps everything snappy and precise at around 10% ABV.

Borachio's 2019 Sangiovese comes from organically farmed vines in Mount Torrens, a locality in the Adelaide Hills of South Australia. This is the final vintage from this particular vineyard source, as the vines are no longer there. The wine is 100% Sangiovese, made with zero additives and no sulfur added.

Winemaker Mark Warner used 100% whole-bunch semi-carbonic maceration, with the fruit locked down for approximately one week and zero forced extraction. The wine was not fined and not filtered. The result is a bright, clear garnet in the glass, with a nose of blue-toned fruit and a clean, healthy ferment character underneath.

On the palate it sits firmly in the light-bodied, high-acid camp that defines Borachio's approach to red wine. Juicy raspberry fruit, a light grip of tannin, and pronounced acidity make this a wine you want slightly chilled. The 2019 vintage brought more depth and structure to this cuvee compared to its predecessor.

Borachio wines are bottled in small quantities in McLaren Flat, South Australia. All wines across the range share the same philosophy: organic fruit, no additions, and no corrections in the cellar.

Serve lightly chilled alongside pizza, pasta with tomato-based sauces, or simple charcuterie. The high acidity and low tannin make it a natural fit for dishes with olive oil and herbs. It also works as a standalone porch pour in warmer months.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Borachio

Borachio is the project of Alicia Basa and Mark Warner, based in Carey Gully in the Adelaide Hills of South Australia. The two met in Sydney in 2003 and eventually relocated to South Australia to pursue winemaking. Before launching Borachio, they trained with James Erskine of Jauma, an established Adelaide Hills natural wine producer. Borachio released its first wines around 2016. The label artwork across the range is designed by Alicia's sister Pilar.

Borachio sources fruit from organically farmed vineyards in Mount Compass and Mount Torrens, both in South Australia. The winery does not own the vineyards and works with growers on a contract basis. All fruit is grown without synthetic inputs, and the wines are made with zero additives and zero sulfur additions. The team's stated priority is fruit with pH below 3.5, which they achieve through site selection and, when needed, through blending with high-acid varieties such as Chardonnay.

Winemaking across the Borachio range favors whole-bunch and carbonic or semi-carbonic approaches with no pigeage or pump-over. Fermentations run on wild yeast in stainless steel tanks. All wines are unfined and unfiltered. The wines are bottled in small batches in McLaren Flat. The Sangiovese 2019 was made via 100% whole-bunch semi-carbonic maceration, with the fruit locked down for approximately one week and no forced extraction at any stage.

Adelaide Hills, Australia

The Adelaide Hills GI sits within the Mount Lofty Ranges east of Adelaide, stretching roughly 70 kilometers with vineyard elevations ranging from 300 to 700 meters. At these altitudes, mean January temperatures average around 19.1 degrees Celsius, approximately 4 degrees cooler than the Adelaide CBD, which translates to a long, slow growing season of 140 or more days. Annual rainfall reaches 650 to 1000 millimeters, significantly higher than neighboring Barossa Valley. The region has two formally recognized sub-regions: Lenswood and Piccadilly Valley, each with distinct soil profiles and microclimates.

Soils across the Adelaide Hills vary considerably with elevation and topography. At lower sites, grey-brown loamy sands and sandy loams over clay subsoils are common. On upper slopes and ridges, soils become shallower and stonier, with shale and ironstone present in many blocks. Mount Torrens, the source vineyard for this Sangiovese, sits in the eastern part of the Adelaide Hills zone. The region has historically been planted to Sauvignon Blanc, Chardonnay, and Pinot Noir, but growers like Borachio have demonstrated that Italian varieties such as Sangiovese can thrive here when farmed and made with care. Cool nights during ripening preserve acidity and fruit definition in red varieties.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
