Harvested in extreme heat yet somehow pulling off bright, fresh red fruit — wild strawberry and candied apple with a fine grip on the finish — this is the kind of low-ABV red (10.2%) you reach for when you want a bottle that disappears easily. The whole-bunch foot-stomp and Pash Rash top-up give it a slightly textured, almost fizzy energy that sets it apart from any conventional Pinot Noir in its price range.

Borachio's 2020 Pinot Noir comes from organically farmed vineyards in the Mount Compass area of South Australia's Fleurieu Peninsula, a site defined by sandy loam over clay soils and a cool, coastal feel that the region's winemakers consider distinct from neighbouring McLaren Vale. The fruit was picked during a heatwave — three consecutive days over 40°C — which makes the wine's brightness and lifted acidity all the more remarkable.

Winemaking is low-intervention from start to finish: whole bunches were foot-stomped and macerated for approximately four days, with a portion of Pash Rash (Pinot Noir, Savagnin, Chardonnay) juice blended in to regulate the fermentation. The wine was bottled unfined, unfiltered, and with zero added sulfites. ABV clocks in at 10.2%.

In the glass this is a light, translucent red with vivid acidity and minimal tannin. The palate is bright and red-fruited — wild strawberry, a hint of candied apple skin, and a fine gripping quality right at the back of the palate. It drinks closer to a serious chilled red than a conventional Pinot Noir, and rewards a brief chill before serving.

The low tannin and lively acidity make this a natural match for charcuterie, soft-ripened cheeses, and light chilled meats like roast chicken or vitello tonnato. It also holds up well against dishes with a touch of heat — spicy pork larb or Thai-style salads work well given the wine's fruit brightness and low alcohol. Serve lightly chilled around 55-58°F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Borachio

Borachio is the project of Alicia Basa and Mark Warner, based in Carey Gully in the Adelaide Hills. The two met at a hardcore show in Sydney in 2003, and after years of working other careers they relocated to South Australia to make wine. Their first exposure to winemaking came through working harvests with James Erskine of Jauma, one of the foundational figures of Australia's natural wine scene. Borachio launched in 2016.

Fruit is sourced from organically farmed vineyards in Mount Compass and Mount Torrens — Borachio does not own the vineyards but purchases fruit from these sites each vintage. The wines are preservative and additive free across the board: no fining, no filtration, zero added sulfites. The sandy soils of Mount Compass are central to the house style; Mark Warner has described them as a 'secret weapon' for supercharging acidity in the finished wines.

Winemaking at Borachio is deliberately low-tech and adapted to each vintage. The 2020 Pinot Noir was made with whole bunches that were foot-stomped and macerated for approximately four days, with direct-pressed Pash Rash juice added to the tank to manage the vigorous fermentation driven by the heatwave harvest conditions. The wine was fermented on wild yeasts, then bottled unfined and unfiltered with no sulfite additions.

Wine region

Adelaide Hills, Australia

The Adelaide Hills GI sits in South Australia's Mount Lofty Ranges, running roughly 70 kilometres from near Mount Pleasant in the north to Mount Compass in the south. Vineyards range from 230 to 650 metres in elevation, and the altitude-driven cooling — approximately 0.5°C per 100 metres — produces a mean January temperature of around 20°C, significantly cooler than Adelaide's CBD. Two official sub-regions exist within the GI: Lenswood and Piccadilly Valley, both recognised for distinct soils and cooler microclimates. Borachio sources its Pinot Noir from Mount Compass, at the southern end of the GI on the Fleurieu Peninsula, where the site has a coastal maritime influence from the Gulf St Vincent and characteristically sandy soils over clay.

Soils across Adelaide Hills vary from grey-brown loamy sands to clay subsoils, with patches of ironstone and schist in higher elevations. The sandy soils at Mount Compass are well-drained and low in fertility, which keeps vine vigour in check and contributes to the bright acidity common in wines from this part of the region. The dominant varieties planted across Adelaide Hills are Sauvignon Blanc, Chardonnay, Pinot Noir, and Pinot Gris. The cool growing season — well suited to aromatic whites and light reds — has attracted a significant number of natural and minimal-intervention producers who lean on the region's natural acidity retention rather than cellar manipulation.
