Tasting notes

The 2020 had no hen-and-chicken fruit set issues, producing a richer, more complete expression of this 30-year-old Seaview block than most vintages. Three weeks of skin contact gives it real structure — dark fruit, briary spice, and a floral edge — without losing the freshness that defines Erskine's wines.

The Birdsey Seaview is a single-vineyard Cabernet Franc from Peter Birdsey's block on the Seaview ridge in McLaren Vale, South Australia. The vines were around 30 years old at the time of the 2020 harvest and grow on red sand over clay, elevated above the bay. Organically farmed by viticulturist Fiona Wood under NASAA certification.

The 2020 vintage was notable for the absence of hen-and-chicken — the uneven fruit set that normally leaves a percentage of small, hard, green berries on the clusters. Without it, the fruit came in more even, riper, and more complete than in a typical year. James Erskine fermented the grapes on skins for three weeks, then pressed to old French oak where the wine rested for ten months before bottling. Zero additions, no fining, no filtration. Sealed under crown cap.

On the palate, this reads as the fuller, more structured end of the Jauma lineup — dark-fruited and aromatic, with briary tannin, earthy depth, and a floral lift characteristic of Cabernet Franc. The extended skin contact adds grip and texture without tipping into austerity.

Jauma produces all wines without any additions or subtractions: no sulfur, no added yeasts, no acids, no fining agents. This bottle is a direct expression of a single block, a single vintage, and one winemaker's decision-making in the cellar.

Works well alongside lamb chops, duck confit, or anything from the grill with some char on it. The earthy, savory character also holds up to aged hard cheeses and charcuterie boards. If going vegetarian, try it with roasted eggplant or lentil dishes with plenty of herbs.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Jauma

Jauma was founded in 2010 by James Erskine, a former sommelier who was named Australian Gourmet Traveller Sommelier of the Year in 2008 and held the Negociants Working with Wine Fellowship the same year. He also completed an honours degree in Agricultural Science through the University of Adelaide and UC Davis, specializing in soil chemistry, and served as chief judge of the Adelaide Review Hot 100 wine show from 2010 to 2013. Before launching Jauma, Erskine was a founding member of Natural Selection Theory, a collective of Australian natural winemakers.

Jauma's winery and farm are located on 40 acres of certified organic land in Lenswood in the Adelaide Hills, on unceded Peramangk Country. The McLaren Vale fruit comes from a network of long-term growers managed organically by viticulturist Fiona Wood, including Peter Birdsey's Seaview block, and is NASAA-certified organic. Erskine has worked with Fiona Wood since 2011. In 2018 he purchased the Lenswood property — already organically certified for over a decade — and has since planted Cabernet Franc, Chenin Blanc, Savagnin, and Gewurztraminer on the farm.

Since 2015, Erskine has made all Jauma wines with zero additions: no sulfur, no cultured yeast, no added acid, no fining agents, and no filtration. All fruit is hand-harvested. Fermentations use only ambient wild yeast. All wines are sealed under crown cap, a practice Erskine adopted across the full range from 2016. The Birdsey Seaview Cabernet Franc is fermented on skins for three weeks, then pressed to old French oak for ten months before bottling.

Wine region

McLaren Vale, Australia

McLaren Vale sits roughly 45 minutes south of Adelaide, bordered by the Gulf St Vincent to the west and the Mount Lofty Ranges to the east and south. The GI covers 433 square kilometers with around 7,400 hectares under vine. The climate is Mediterranean: warm, dry summers with low humidity, and most rainfall arriving in winter and spring. Daytime growing-season temperatures typically run between 20 and 30 degrees Celsius, moderated by afternoon sea breezes off the Gulf and cool air descending from the Ranges. That combination of warmth and low disease pressure has made McLaren Vale home to the highest concentration of certified organic vineyards in Australia.

The region has over 40 distinct soil types, ranging from red-brown sandy loams and grey-brown loamy sands to terra rossa over limestone and dark cracking clays. The Seaview subdistrict, on the western ridge overlooking the coast, sits on sandier profiles with red sand over clay subsoils. McLaren Vale remains phylloxera-free. Its primary red varieties are Shiraz, Grenache, and Cabernet Sauvignon, though Cabernet Franc has found a strong foothold with producers like Jauma who source from older blocks on the ridge.
