This is Verdejo doing what it does best in a high-desert setting: bright lemon peel, green apple, and a flinty mineral edge, all at 11.5% ABV without any winemaking tricks to prop it up. The one-liter format and no-sulfites-added approach make it genuinely easy to reach for on a weeknight.

Gulp Hablo Verdejo 2019 is 100% Verdejo grown on Demeter-certified biodynamic vineyards near the village of Las Mesas in Castilla-La Mancha, Spain. The fruit comes from two sites farmed by the Parra family: Entresendas, an ancient riverbed with alluvial soils, and Olla del Monte (known locally as Cuesta Colorá), where chalky clay slopes are covered with heat-retaining pebbles. The estate totals approximately 180 hectares and holds Sohiscert organic and Demeter biodynamic certifications.

The grapes are hand-harvested and fermented with indigenous yeasts in stainless steel. There is no malolactic fermentation and no sulfites added. The wine is lightly filtered before bottling. Winemaking is done in collaboration with Juan Antonio Ponce of Bodegas Ponce, one of the most respected natural winemakers in central Spain.

The result is a dry, light-to-medium-bodied white with a greenish-straw color, floral and citrus aromatics, flavors of green apple, lemon peel, and pear, and a clean mineral finish. It is also certified vegan by the European Vegetarian Union. Bottled in a one-liter format and built for immediate drinking.

Works well with grilled fish, fresh goat cheese, or a simple green salad with lemon vinaigrette. The bright acidity cuts through fried foods cleanly, making it a reliable match for seafood tapas or vegetable-based dishes. Also good alongside aged Manchego, which is made in the same region.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Gulp Hablo

Brothers Francisco, Javier, and Luis Parra founded Bodegas Parra Jiménez in 1993 near Las Mesas in the Cuenca province of Castilla-La Mancha, at a time when organic viticulture was largely unknown in the region. By 1996 they were exporting their first certified organic wines. In 2008 they converted to biodynamic farming under the Demeter certification. Today the estate is recognized as one of the largest certified organic vineyards in Europe, with approximately 180 hectares across two main vineyard sites.

The estate farms two named vineyard parcels. Entresendas sits in an ancient riverbed with alluvial soils. Olla del Monte, called Cuesta Colorá for its coloring, features chalky clay covered with pebbles that store daytime heat and release it through cool desert nights. Beyond viticulture, the brothers have integrated livestock, garlic, cereals, and legume cultivation to create a closed biodynamic ecosystem. They also produce Manchego cheese from an autochthonous black sheep breed native to La Mancha.

Since 2017, Pablo Parra (Javier's son) has led winemaking at the estate after studying at the University of Ribera del Duero. The Gulp Hablo line was created in 2017 as a collaboration with importer T. Edward Wines and winemaker Juan Antonio Ponce of Bodegas Ponce. For the Verdejo, grapes are hand-harvested, fermented with indigenous yeasts in stainless steel, and bottled without malolactic fermentation and without sulfite additions. The wine carries Sohiscert organic certification, Demeter biodynamic certification, and European Vegetarian Union vegan certification.

Castilla-La Mancha, Spain

Castilla-La Mancha occupies Spain's Meseta Central south and east of Madrid, sitting at an average elevation of 640 to 700 meters above sea level. The climate is extreme continental: summers regularly exceed 40 degrees Celsius, winters drop below freezing, and annual rainfall rarely exceeds 400mm. These harsh conditions reduce disease pressure and make organic and biodynamic viticulture practical at scale. The region accounts for approximately 47 percent of Spain's total vineyard surface, making it the largest continuous wine-producing area in the world.

Within Castilla-La Mancha, DO La Mancha is Europe's largest single demarcated quality wine zone, covering roughly 190,000 hectares across the provinces of Albacete, Cuenca, Ciudad Real, and Toledo. The Las Mesas sub-zone in Cuenca province, where the Gulp Hablo vineyards sit, features two distinct soil profiles: alluvial riverbeds at Entresendas and chalky clay slopes at Olla del Monte. Airén historically dominated white plantings across La Mancha, but Verdejo, Macabeo, Sauvignon Blanc, and Tempranillo (locally called Cencibel) have gained significant ground as producers focus on quality over volume.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
