Tasting notes

At 10.5% ABV, NuovO drinks like a Umbrian answer to Beaujolais Nouveau: bright cherry, fresh violet, and a floral lift from Aleatico that you won't find in a standard Sangiovese. The semi-carbonic process keeps it crunchy and juicy with zero heaviness.

NuovO is a blend of 90% Sangiovese with 10% Ciliegiolo and Aleatico from Danilo Marcucci's estate in Monte Melino, a hilltop hamlet just outside Perugia in the Trasimeno-Perugino subzone of Umbria. The vineyards sit at 250–300 meters on clay soils over a calcareous marl base, planted in the early 1970s and never treated with chemicals. The wine is filed under Umbria IGT.

Marcucci uses a semi-carbonic vinification approach: partially destemmed fruit goes into an open-top fermenter with some whole clusters, fermented with native yeasts and a submerged cap, no temperature control. After fermentation the wine is aged in a vintage fiberglass tank from the 1970s — the same tank depicted on the label, which resembles the Apollo Moon Lander. Bottled unfined and unfiltered with zero added sulfur.

The wine is named NuovO as a nod to Beaujolais Nouveau, applying that early-release, carbonic-maceration logic to Umbrian grapes. At 10.5% ABV it lands on the lighter end of the red spectrum: high-toned, juicy red fruit, lifted floral notes from the Aleatico, and a clean, bright finish driven by Sangiovese acidity. Chill it down.

Serve lightly chilled alongside charcuterie, fresh soft cheeses, or a simple tomato-based pasta. It also works as a standalone porch wine given its low alcohol and juicy character. Umbrian lentil dishes with herbs are a natural match.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Conestabile della Staffa

Conestabile della Staffa is a historic estate in the hilltop hamlet of Monte Melino, just outside Perugia. The property traces its roots to two noble Umbrian families — the Conestabiles, originally from Orvieto, and the Della Staffas, from Perugia — who united through an arranged marriage in the 1700s. At its peak in the 19th century the estate covered over 700 hectares of mixed agricultural land, with more than 100 hectares under vine, and was the most prominent winery in the Trasimeno-Perugino area, producing over 10,000 hectoliters per vintage. Production collapsed after World War II and the last wine from the old cantina was made in 1956; from then until 2015, grapes were sold to the local cooperative.

Danilo Marcucci, who married into the family through his wife Alessandra — a great-granddaughter of the Counts of Conestabile della Staffa — relaunched the estate in 2015. He brought more than 20 years of winemaking and farming experience, having worked alongside figures including Lino Maga, Eduardo Valentini, Cappellano, and Vittorio Mattioli. The estate now farms over 12 hectares of vines planted in the early 1970s. The land was never treated with chemicals, and Marcucci farms it using organic practices. Grapes cultivated include Sangiovese, Ciliegiolo, Gamay del Trasimeno, Canaiolo, Sagrantino, Grechetto, Trebbiano, and Malvasia.

In the cellar, Marcucci works without added yeasts, chemical corrections, or sulfur dioxide. Fermentations are spontaneous and occur without temperature control. Wines are aged in fiberglass tanks, unfined, and unfiltered. For NuovO specifically, the technique is semi-carbonic: grapes are partially destemmed, with some whole clusters going into an open-top fermenter with a submerged cap, referencing the Beaujolais Nouveau model of early, carbonic-style release. The wine rests post-fermentation in a 1970s-era fiberglass tank — its distinctive shape depicted on the label.

Wine region

Umbria, Italy

Umbria is a landlocked region in central Italy bordered by Tuscany to the west and Lazio to the south. The landscape is predominantly hilly, with elevations ranging from 200 to 500 meters, and the climate balances Mediterranean warmth with continental temperature swings between day and night. The Trasimeno-Perugino subzone, located west of Perugia around Lake Trasimeno — Italy's fourth-largest lake — benefits from the lake's moderating effect, which softens summer heat and extends the growing season. Soils in this subzone are clay-dominant with a calcareous marl subsoil, shaped by ancient sedimentary and fluvio-lacustrine deposits.

Umbria holds 2 DOCGs, 13 DOCs, and 6 IGT zones. Key appellations include Montefalco Sagrantino DOCG, Torgiano Rosso Riserva DOCG, and the broader Umbria IGT, under which many natural producers like Conestabile della Staffa operate. The Colli del Trasimeno DOC covers the hills along the lake's shores and permits red varieties including Sangiovese, Ciliegiolo, Gamay del Trasimeno (a local name for Grenache), Cabernet Sauvignon, and Merlot. Sangiovese is the most widely planted red variety in the region, while indigenous grapes like Grechetto, Trebbiano, Sagrantino, and Ciliegiolo remain the backbone of the most expressive local wines.
