Spergola is one of the rarest indigenous grapes in Emilia-Romagna, and Quarticello is among the few producers working with it seriously. The 48-hour skin contact and in-bottle secondary fermentation give this wine a distinctive saline-mineral edge alongside fresh peach and grapefruit, keeping it lively and textured at just 11% ABV.

Le Boccette is 100% Spergola, a rare indigenous white grape native to the Scandiano hills in the province of Reggio Emilia. Quarticello's five-hectare estate sits on alluvial soils with shallow gravel in Montecchio Emilia, in the Val d'Enza at the foot of the Tuscan-Emilian Apennines. Vines are trained in Guyot. The estate has been certified organic since 2015.

The wine is made using the ancestral method: grapes are pressed whole, the must macerates on the skins for 48 hours, then ferments spontaneously with native yeasts. The wine is bottled before fermentation finishes, completing its second fermentation in bottle, where it ages for 6 to 8 months. It is never filtered or clarified. ABV is 11%.

In the glass it is pale straw yellow with a gentle, persistent mousse. The nose offers peach, ginger, and citrus, with a subtle floral note and a yeasty, bread-like undercurrent from the secondary fermentation. On the palate it is dry and light-bodied, with citrusy grapefruit acidity, a pinch of salinity, and a clean mineral finish. There is natural sediment in the bottle.

Appellation: Emilia IGP. Drink young and well chilled.

Its citrusy acidity and salinity make it a natural match for fried or seafood-based antipasti, such as fritto misto or a simple fish salad. It also works well alongside fresh cheeses, savory vegetable tortes, and cured meats like prosciutto di Parma. Serve well chilled at 43-46F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Quarticello Azienda Agricola

Quarticello Azienda Agricola was founded in 2001 when the Maestri family purchased a vineyard in the locality known as Quarticello, near Montecchio Emilia in the province of Reggio Emilia. Roberto Maestri went on to study viticulture and enology at the University of Bologna and bottled his first commercial vintage in 2006. He has managed the estate full-time since 2007.

The estate farms approximately five to ten hectares of vines on alluvial, clay-gravel soils in the Val d'Enza at the foot of the Tuscan-Emilian Apennines. Organic certification was achieved in 2015. Roberto follows biodynamic principles in the vineyard, uses no synthetic chemicals, and limits interventions to copper and sulfur treatments, manual defoliation, shoot selection, and careful pruning. Varieties grown include Spergola, Malvasia di Candia, Malbo Gentile, Lambrusco Maestri, Lambrusco Salamino, and Lambrusco Grasparossa.

In the cellar, Roberto intervenes as little as possible. Fermentations are spontaneous with native yeasts. For Le Boccette, grapes are pressed whole and the must macerates on skins for 48 hours before spontaneous fermentation begins. The wine is bottled before fermentation is complete, allowing for natural in-bottle refermentation and 6 to 8 months of bottle aging. No filtration or fining is applied. Sulfite additions are minimal.

Emilia-Romagna stretches across northern Italy from the Adriatic coast to the Tuscan-Emilian Apennines. The western Emilia side, anchored by cities like Parma, Reggio Emilia, and Modena, is the heartland of Lambrusco production. The Val d'Enza, where Quarticello is based, sits at the foothills of the Apennines near Montecchio Emilia, with alluvial soils of clay, silt, and shallow gravel deposited by the Enza River. The climate is continental, with hot summers and cold winters, moderated at higher elevations by Apennine breezes that help preserve acidity in white varieties.

The region's principal DOC and IGP appellations for sparkling whites include the Colli di Scandiano e Canossa DOC, the traditional home of Spergola, and the broader Emilia IGP under which Quarticello bottles Le Boccette. Spergola is indigenous to the Scandiano area in Reggio Emilia province and thrives on clay-chalk soils. DNA testing in 2000 confirmed it is genetically distinct from Sauvignon Blanc, allowing it to be registered in Italy's National Grape Variety Catalogue. Lambrusco in its many strains, Malvasia di Candia Aromatica, Malbo Gentile, and Albana are among the other native varieties that define the region's wine identity.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
