Carbonic maceration on Cabernet Sauvignon is genuinely rare, and here it works: the grape's deep red cherry and green pepper notes come through cleanly while the tannins stay soft and the whole thing drinks more like a juicy Beaujolais than a Bordeaux. The finish is longer than the light frame suggests, with a vegetal lift that keeps it honest.

L'Un Dans L'Autre is 100% Cabernet Sauvignon vinified by semi-carbonic maceration, a method rarely applied to this grape. Aurélie and Vincent Garreta source from vines in Gordes, Vaucluse, situated between the Luberon and Ventoux massifs at around 150 meters elevation on alluvial and mixed soils. Because Cabernet Sauvignon is not permitted in Ventoux AOC red blends, this wine is classified as Vin de France.

Carbonic maceration ferments the grape juice intracellularly inside whole, uncrushed clusters in a carbon dioxide-rich environment. Applied to Cabernet Sauvignon, this draws out the variety's red cherry fruit and green-peppery character while substantially softening the tannins. The result is a Cab with surprising lightness, juiciness, and drinkability. After maceration, the wine rests for two to three months in stainless steel or resin tanks with no fining or filtering.

Fermentation is carried out entirely by indigenous yeasts naturally present on the grapes. Sulfur additions are minimal, with up to 15 mg/L added only at bottling. The Garretas began farming in 2014 with organically farmed old-vine parcels in Gordes, and all their vineyards are certified organic. Harvest is done by hand with careful sorting to allow for the whole-cluster work in the cellar.

The low tannin and fresh acidity make this a flexible table wine. Pair it with charcuterie, roast chicken, or a simple tomato-based pasta. It also works well slightly chilled alongside grilled vegetables or a Provençal ratatouille.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Les Maou'

Aurélie and Vincent Garreta founded Les Maou' in 2014, starting with 3.5 hectares of leased vines in Gordes, Vaucluse. These initial parcels were already old-vine Carignan, Cinsault, and Aubun that had been farmed organically for over 20 years. The estate has grown to 10 hectares and the team has expanded to four people. In 2016, they added 2 hectares of old-vine Grenache and Caladoc on terraces facing Mont Ventoux, near Venasque.

All vineyard work is certified organic, with no synthetic chemistry. The Garretas use compost, plant cover crops, and work the soil between rows to restore biological activity in parcels that had passed through conventional farming. Vine regeneration work has been underway to adapt older material to changing climate conditions. Harvest is done by hand with careful sorting to enable whole-cluster work in the cellar.

In the cellar, grapes macerate as whole clusters using carbonic maceration, foot-stomped fermentation, or a combination of both, depending on the cuvée. Fermentation is conducted solely by indigenous yeasts. The Garretas avoid fining, filtration, and any processes they consider damaging to the wine. Sulfites, when used at all, are added in small amounts only at or near bottling, and are noted on the back label of each wine.

Wine region

Vaucluse, France

The Les Maou vineyards sit near Gordes in the Vaucluse department of southeastern France, in the corridor between the Luberon and Ventoux mountain ranges. This position gives the vines a relatively cool microclimate for southern France, with diurnal temperature swings that preserve acidity and extend hang time. Soils in the area are alluvial and mixed, with limestone scree from the Monts de Vaucluse and clay-sandy deposits. Elevation around 150 meters moderates the intense Mediterranean sun.

The surrounding AOC Ventoux spans 51 communes across Vaucluse and earned AOC status in 1973, covering red, white, and rosé wines built primarily from Grenache, Syrah, Mourvèdre, Cinsault, and Carignan. Because Cabernet Sauvignon is not an approved variety for Ventoux AOC reds, L'Un Dans L'Autre carries a Vin de France designation, which gives the Garretas the freedom to work with this grape outside appellation constraints. The AOC Ventoux is the coolest appellation in the southern Rhône, and the Luberon AOC borders it to the south along the Calavon river.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
