This Touriga Nacional-based blend shows tart acidity with raspberry, strawberry, and rhubarb flavors. Cinnamon bark and preserved lemon peel add complexity. Light tannins provide texture. Serve chilled at 50-55°F; no decanting required. The wine's substantial structure pairs well with grilled salmon, where the acidity and fruit complement the fish's richness and natural oils.

Description

Humus Rosé is produced by Encosta da Quinta in Portugal's Lisboa region, specifically from the Óbidos area. Winemaker Rodrigo Filipe creates this natural wine from a blend of Touriga Nacional, Arinto, and Fernão Pires grown on clay and limestone soils. The Touriga Nacional macerates on red skins for three hours before macerating with destemmed white grape skins for 30 days. Wild yeast fermentation occurs in stainless steel tanks, followed by aging in 225-liter oak barrels for nine months. The wine remains unfiltered, unfined, with no added sulfites, from organically certified vineyards.

Tasting notes

Salmon-pink color with slight cloudiness from natural winemaking. The nose offers red berry fruit, citrus peel, and subtle spice aromas. The palate reveals tart acidity, strawberry and rhubarb flavors, with earthy notes and light tannic grip. The finish shows persistence with citrus and mineral qualities from the limestone terroir.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package gets returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee to be determined based on shipping address and number of bottles. Shipping wine is extremely expensive, we are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to re-route a package after it's been shipped, we can do so upon payment of a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancelling fee – the amount depends on how big the order is. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat/frost-related issues. We offer ice-packs upon request. please let us know should you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct, otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times with no success or if you fail to retrieve your package at the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Encosta da Quinta

Encosta da Quinta is a family-owned winery located in Alvorninga, within the Óbidos demarcated region of Portugal's Lisboa wine area. The estate sits between the Atlantic Ocean and the Serra dos Candeeiros mountains, approximately one hour north of Lisbon and 20 kilometers from the coast. This positioning creates a cool microclimate influenced by sea breezes and high humidity, which helps maintain natural acidity in the grapes.

Rodrigo Filipe manages the property, which he took over from his father in the early 2000s. His father planted the first vineyard parcels during the 1990s, while his grandfather previously focused on polyculture farming, a common practice in the 1960s. The estate now dedicates its agricultural efforts entirely to viticulture, with nine hectares of vines planted on red clay and limestone slopes.

Rodrigo Filipe came to winemaking from an engineering background without formal oenological training. He developed his winemaking knowledge through his father's wine books, attending courses and workshops, and practical experience in the vineyards and cellar. The estate received organic certification in 2006 and maintains these practices across all vineyard operations.

Encosta da Quinta produces wines under the Humus label, focusing on natural winemaking methods with Portuguese native grape varieties including Touriga Nacional, Arinto, Fernão Pires, and Castelão. The winery's approach involves spontaneous fermentation with wild yeasts and no additions during winemaking, including no added sulfites at bottling. This places Rodrigo among a small group of Portuguese winemakers working without sulfur additions.

The estate's remote location allows chemical-free farming practices and encourages biodiversity within the vineyards. Grasses grow freely between vine rows, contributing to the ecosystem. The cool microclimate results in wines with moderate alcohol levels, typically ranging from 11-12% ABV. Production includes still red and rosé wines, as well as pétillant-naturel sparkling wines, all bottled without fining or filtration to preserve their natural character.

The Lisboa wine region, formerly known as Estremadura, is located on Portugal's western coast, stretching from north of Lisbon to the central coastal area. The region covers approximately 8,000 hectares of vineyards and ranks among Portugal's most productive wine areas. Lisboa holds the designation Vinho Regional de Lisboa, allowing winemakers flexibility in grape varieties and winemaking styles compared to stricter DOC regulations.

The region divides into nine DOC sub-regions, including Óbidos, Alenquer, Arruda, Torres Vedras, Lourinhã, Bucelas, Carcavelos, Colares, and Encostas d'Aire. Each sub-region features distinct microclimates and soil compositions. Óbidos, where Encosta da Quinta operates, lies in the northern part of the Lisboa region, characterized by clay and limestone soils with maritime influence from the nearby Atlantic Ocean.

Lisboa's proximity to the Atlantic Ocean creates a temperate maritime climate with moderate temperatures year-round. Coastal vineyards experience cooling sea breezes and higher humidity levels, which help preserve natural acidity in grapes and reduce disease pressure. The region receives adequate rainfall, primarily during winter months, while summers remain warm and dry. This climate allows cultivation of both international and Portuguese native grape varieties.

Traditional Portuguese varieties grown in Lisboa include Arinto, Fernão Pires, Vital, Seara Nova for white wines, and Castelão, Touriga Nacional, Tinta Miúda, and Ramisco for reds. International varieties such as Chardonnay, Sauvignon Blanc, Cabernet Sauvignon, and Syrah also appear in regional production. The diversity of terroirs and permitted varieties results in a wide range of wine styles, from light, fresh whites to structured reds and traditional fortified wines.

The Lisboa region has experienced growth in natural and organic wine production over recent decades. Winemakers increasingly focus on expressing terroir through minimal intervention techniques, lower yields, and sustainable farming practices. The region's proximity to Lisbon provides market access while maintaining relatively affordable land prices compared to more established Portuguese wine regions like the Douro or Dão. This combination attracts both established producers and new winemaking projects focused on quality-driven, terroir-specific wines.
