A bone-dry Cava blending Macabeu, Xarel-lo, and Parellada with zero dosage. Serve well-chilled at 40-45°F directly from the refrigerator—no decanting required. The fine mousse and citrus-driven freshness make it a natural match for pan con tomate. Similar to entry-level Champagne or Crémant de Loire in structure and dryness.

Product Description

Azimut Cava Brut Nature NV comes from Alt Penedès in Catalunya, Spain's most renowned sparkling wine district. The Suriol family produces this traditional-method Cava using organically grown Macabeu (40%), Xarel-lo (30%), and Parellada (30%) from clay-limestone soils. After primary fermentation with indigenous yeasts in underground concrete tanks, the wine undergoes secondary bottle fermentation and ages a minimum of 10 months on the lees before disgorgement. With dosage under 2 grams per liter of residual sugar, Azimut Cava Brut Nature carries the "Brut Nature" designation—the driest category of Spanish sparkling wine.

Tasting notes

Pale straw yellow with persistent fine bubbles rising in steady streams. The nose offers white pear, green apple, white flowers, and a subtle yeasty note from lees aging. Crisp and elegant on the palate with tropical fruit hints, mineral undertones, and a clean, refreshing finish.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package gets returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee to be determined based on shipping address and number of bottles. Shipping wine is extremely expensive, we are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to re-route a package after it's been shipped, we can do so upon payment of a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancelling fee – the amount depends on how big the order is. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat/frost-related issues. We offer ice-packs upon request. please let us know should you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct, otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times with no success or if you fail to retrieve your package at the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Cellers de Can Suriol del Castell operates from the medieval Castell de Grabuac in Font-Rubí, Alt Penedès—a 15th-century farmhouse complete with a 14th-century Romanesque chapel. The Suriol family has occupied this property since the 1600s, farming grapes and various crops across more than four centuries. The phylloxera epidemic of 1890 destroyed all their vines, forcing the family to replant with American rootstock over the following decade. While the Suriols made wine for personal consumption and local tavernas for generations, it was patriarch Francesc who began serious Cava production and estate bottling in 1985.

Today, Assís Suriol leads the family operation, overseeing approximately 30 hectares of vineyards divided into more than 25 distinct micro-parcels at elevations between 250 and 350 meters. The estate obtained organic certification from CCPAE (Catalan Council of Ecological Agricultural Production) in 1996, making Cellers de Can Suriol del Castell one of the pioneering organic producers in Penedès. In recent years, they have incorporated biodynamic practices, following lunar cycles and eschewing all synthetic inputs.

The winery produces two distinct lines. The Suriol label features estate-grown fruit from their own vineyards: Xarel-lo, Macabeu, Parellada, and red varieties including Tempranillo (locally called Ull de Llebre), Grenache, and Monastrell. The Azimut line—named from the Catalan term meaning "the line between the sun and the sea"—uses certified organic grapes purchased from neighboring farmers who share the family's commitment to sustainable viticulture. This project promotes organic agriculture throughout the region by supporting like-minded growers.

Fermentation relies exclusively on indigenous yeasts. The underground concrete tanks maintain stable temperatures year-round, allowing slow, natural fermentation and extended lees aging. Annual production reaches approximately 90,000 bottles for Suriol wines and 120,000 for the Azimut range.

Penedès, Spain

Penedès stretches across the coastal hills between Barcelona and Tarragona in northeastern Spain, approximately 45 kilometers from the Catalan capital. This Denominación de Origen Protegida encompasses three distinct subzones: Baix Penedès along the Mediterranean coast, Penedès Central in the expansive central valley, and Alt Penedès in the mountainous interior where elevations reach up to 800 meters. The region covers 66 municipalities across the provinces of Barcelona and Tarragona, with Vilafranca del Penedès serving as the regional capital and Sant Sadurní d'Anoia recognized as the world capital of Cava.

Archaeological evidence confirms viticulture in Penedès dates back to the 6th century BCE when Phoenician traders introduced vines to the area. The region developed a significant export market through Moorish occupation and experienced unprecedented growth during Spain's 18th-century expansion into South America. The phylloxera plague of the late 1800s devastated the vineyards and shifted production from predominantly red to white varieties, directly leading to the first Cava production in the 1870s.

The terroir varies considerably across the three subzones. Soils consist primarily of Miocene sediments—sandy, clay-like compositions poor in organic matter—with calcareous, limestone, and loam formations throughout. The Mediterranean climate brings mild winters and warm summers, though Alt Penedès benefits from cooler temperatures due to elevation. Approximately 95% of all Cava originates from Penedès, with white grape varieties dominating: Xarel-lo, Macabeu, and Parellada form the traditional Cava blend. Red varieties including Garnacha, Monastrell, and Sumoll have seen renewed interest in recent years.

As of 2025, Penedès became the first wine appellation in the world with 100% certified organic production. The region has long been one of Spain's most progressive and innovative wine districts, with producers experimenting with both international varieties and indigenous Catalan grapes for sparkling and still wine production.
